Barbecue Bible Lemon Dill Coriander Sauce

Yield: Makes 1 cup Combine the ingredients for the sauce in a mixing bowl and whisk to mix
- 1/2 1/2 1/2 cup mayonnaise (preferably Hellmann’s or Best Foods)
- 1/2 1/2 1/2 cup sour cream (or more mayonnaise)
- 2 2 2 tablespoons finely chopped fresh dill
- 2 2 2 tablespoons thinly sliced scallion greens
- 1/2 1/2 1/2 teaspoon grated lemon zest
- 1/2 1/2 1/2 teaspoon ground coriander seed
- 1 to 2 1 to 2 2 tablespoons fresh lemon juice
- to and freshly ground black pepper to taste
Parmesan Crusted Salmon with Roasted Broccoli - Cooking Classy

Preheat oven to 400 degrees
- 1 1/4 lbs broccoli crowns, stems cut and reserved for another use, florets chopped into bite size pieces

- 2 eggs, beaten
- 2 tablespoons of vinegar
- 1 0r 2 tablespoon sugar
- 1 tablespoon butter or margarine
- 1 8oz package of cream cheese, softened
- 2/3 cup green pepper, chopped
- 1/3 cup grated onion
- 2 tablespoons chopped pimiento
- 1/8 teaspoon hot sauce
- 1/8 teaspoon salt
Orange Cookies

Mix together shortening, sugar and egg until well blended; stir in orange juice
- Orange Frosting:
- 2/3 cup shortening
- 3/4 cup sugar
- 1 egg, beaten
- 1/2 cup orange juice
- 2 cups flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 tbsp. butter, softened
- 1 1/2 cup powdered sugar
- 1 1/2 to 2 tbsp. orange juice
- Combine all ingredients; beat until smooth.
Creamy Seafood Soup

In skillet, melt 1 tbsp. butter
- 2 tbsp. butter, divided
- 1/2 lb. shrimp, peeled and deveined
- 1/2 lb. scallops
- 1 onion, chopped
- 2 ribs celery, sliced
- 1 tbsp. fresh thyme
- 1 red bell pepper, chopped
- 3 cups heavy cream
- 1/4 cup sherry
- 1/2 tsp. salt
- 1/4 tsp. cayenne pepper
- 1/8 tsp. nutmeg
Shrimp on the Barbie

Soak a dozen long wooden skewers in water for 30 minutes
- 12 giant prawns, shelled and heads and tails intact
- 1/4 cup butter
- 1 cup orange juice (freshly squeezed)
- 2 tbsp Sherry
- 1 tsp grated orange zest
- 2 green onions – tops and white
- 1 tsp freshly grated ginger root
Scalloped Potatoes With Tomatoes and Bell Peppers

Whisk the egg yolks and 1/2 cup milk in a small bowl and set aside
- 2 large egg yolks
- 1 1/2 cups whole milk
- 1 1/2 cups heavy cream

Preheat oven to 350°. In a large bowl, mix the first seven ingredients
- 1 package (30 ounces) frozen shredded hash brown potatoes, thawed
- 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
- 1 cup shredded reduced-fat sharp cheddar cheese
- 2/3 cup reduced-fat sour cream
- 1 small onion, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup crushed cornflakes
- 1 tablespoon butter, melted
