Seafood Dip

Combine all ingredients in a food processor except shrimp
- 1 1/2 cups cream cheese
- 1 1/2 cups sharp cheddar cheese, grated
- 1/2 cup scallions, chopped
- 1 1/2 cups mayonnaise
- 1/2 cup frozen chopped spinach, thawed and drained
- 1/4 cup parsley, chopped
- 1/2 tsp. garlic powder
- 1/2 tsp. sugar
- 1 1/2 tsp. tarragon
- 1/4 cup water
- 1/4 cup red wine vinegar
- 1/2 tsp. white pepper
- 1 1/2 cups bay shrimp, cooked, cleaned and diced
Rogue Creamery Blue Cheese Dressing

Mix and enjoy
- 4 oz. (approx) Rogue Creamery Blue Cheese -ANY TYPE- crumbled
- 1 cup mayonnaise
- 1/2 cup plain non-fat yogurt
- 1/4 cup buttermilk
- 3 tbsp. white wine vinegar
- Freshly cracked black pepper
Chicken Parmesan

This is a twist on our family classic - no breading!
- 1 tbsp. olive oil
- 1 tsp. chopped fresh thyme
- 1 tsp. chopped fresh rosemary
- 1 tsp. chopped fresh flat-leaf parsley
- 4 chicken cutlets (about 3 oz. each)
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 3/4 cup marinara sauce
- 1/4 cup shredded mozzarella
- 8 tsp. freshly grated Parmesan
- 1 tbsp. unsalted butter, cut in to small pieces
Caramelized Balsamic Onions

In a 3-quart rectangular baking dish (not aluminum) combine butter and oil
- 2 tbsp. butter, melted
- 1 tbsp. olive oil
- 1/3 cup balsamic vinegar
- 2 tbsp. dry white wine, chicken broth, or water
- 1 tbsp. granulated sugar
- 1/4 tsp. salt
- 1/8 tsp. freshly ground black pepper
- 4 medium yellow onions
- salt and freshly ground black pepper
Oil-Free Dill Dressing

In a screw-top jar combine all ingredients
- 2/3 cup water
- 1/4 cup white wine vinegar
- 3 Tbsp. powered pectin
- 1 Tbsp. snipped or fresh dill or 1 tsp. dried dillweed
- 1 tsp. sugar
- 1/2 tsp. garlic powder
- 1/4 tsp. dry mustard
- 1/8 . tsp. pepper
Royal Egg White Icing

Beat all ingredients for 7 to 10 minutes
- 3 eggs whites (at room temperature)
- 4 cups confectioners sugar
- 1/2 tsp. cream of tartar

- 1/2 cup butter, cubed
- 1/4 cup maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup chopped pecans, toasted
- 1-1/2 cups all-purpose flour
- 2 tablespoons packed brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 large eggs
- 1-1/3 cups 2% milk
- 3/4 cup canned pumpkin
- 1/2 cup ricotta cheese
Stuffed Shrimp

Preheat oven to 350 degrees F
- 1 tablespoon butter
- 3 green onions, finely chopped
- 1/2 cup finely chopped green bell pepper
- 1/4 teaspoon garlic powder
- 4 1/2 teaspoons heavy cream
- 1 tablespoon Dijon mustard
- Dash cayenne pepper
- 1/2 cup saltine cracker crumbs
- 1/4 cup mayonnaise
- 1 egg
- 2 tablespoons fresh parsley leaves
- 1/2 lemon, juiced
- 1 pound crabmeat, picked over
- 1 pound extra-large or jumbo shrimp (about 24 shrimp), peeled, deveined, tails on
- 12 slices bacon, halved crosswise
- Steamed white rice, for serving, optional

Rigatoni Chard Toss Recipe

Cook rigatoni according to package directions
- 8 ounces uncooked rigatoni or large tube pasta
- 2 tablespoons olive oil
- 1 bunch Swiss chard, coarsely chopped
- 1 small onion, thinly sliced
- 2 garlic cloves, minced
- 3 medium tomatoes, chopped
- 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
- 1/2 teaspoon salt
- 1/8 teaspoon crushed red pepper flakes
- 1/8 teaspoon fennel seed, crushed
- 1/8 teaspoon pepper
- 1/4 cup minced fresh basil
- 1/2 cup grated Parmesan cheese

- 1/2 Crisco
- 2 tbsp. sugar
