Cranberry-Golden Raisin Chutney

Melt butter in a medium saucepan over medium heat
- 2 tablespoons unsalted butter
- Finely chopped shallot (1 medium shallot) - original recipe calls for 1/4 cup; use MUCH less!
- 1 Granny Smith apple, peeled, cored, and cut into 1/2-inch dice
- 1 cup golden raisins
- 12 ounces fresh cranberries
- 2 sprigs fresh thyme
- Grated zest from one lemon
- 1 cup water
- 1/2 cup sugar
- 1 tablespoon fresh lemon juice
Bran muffins

Adapted from recipe from Lela Faye
- 6 c raisin bran cereal - or just use bran flakes and add fruit later
- 2 c boiling water
- 1 c melted shortening - use canola oil or can use 1/2 c oil and 1/2 c applesauce
- 3 c sugar - can be cut to 2 to 2 1/2 c
- 4 eggs beaten - or 1 c egg substitute
- 1 quart buttermilk - can make using lowfat milk and vinegar
- 5 c plain flour - can use 2 c whole wheat and 3 c plain
- 5 t soda
- 2 t salt
- I add 1 t cinnamon
Mexican sweet potato and bean wrap

Cut the sweet potato lengthways and scoop out the soft filling into a bowl
- 1 large sweet potato, baked whole and left to cool
- 1 tsp mexican seasoning
- 100 g cheddar cheese, grated
- 1 tin of mixed beans, drained and rinsed
- 1 hot house lettuce
- 4 tbsp mayonnaise (optional)
- 4 tortilla wraps
Spaghetti with Mascarpone, Meyer Lemon, Spinach, and Hazelnuts

Combine the zest, lemon juice, mascarpone, salt, pepper, and nutmeg in a bowl
- 1 Meyer lemon, zested and juiced (about 3 tablespoons juice)
- 1/2 cup mascarpone cheese
- 1/2 teaspoon salt
- 1/4 teaspoon freshly grated nutmeg
- 1/2 pound spaghetti
- 5 cups (loosely packed) fresh spinach, washed, spun dry, and roughly chopped
- 1/2 cup chopped, toasted hazelnuts
Oatmeal pancakes

- 1 1/4 c oatmeal
- 1 c plain yogurt
- 1 c milk (lowfat is fine)
- 2 beaten eggs
- 1 t honey or sugar
- 1/4 c all purpose flour
- 1/4 c whole wheat flour
- 1 t baking soda
- 1/2 t salt
- 1/4 c chopped nuts

- 1 pkg yeast (I just use 2 1/2 tsp)
- 1/4 cup honey
- 1/2 cup warm water
- 2 1/2 cups bread flour
- 1/2 cup whole wheat flour
- 1/4 cup wheat germ
- 1/4 cup rye flour
- 1/4 cup rolled oats
- 1 tsp. salt
- 1/2 cup cottage cheese
- 1 large egg
- 2 Tbsp. Vegetable Oil
- Oil & Cornmeal for pan
- 1 egg white/frothed w/fork
- additional wheat germ/oats/sunflower nuts/assorted seeds for top.
Kale Salad With Apples and Cheddar

Combine the kale, almonds, apple and Cheddar in a large bowl
- 4 cups very finely chopped or slivered curly kale or Russian kale (about 6 ounces on the stem, or half of a 3/4-pound bunch, stemmed and washed in two rinses of water)
- 2 tablespoons coarsely chopped toasted almonds
- 1 apple, sweet, like a Fuji, or a sweet-tart, like a Gala, Braeburn or Pink Lady, cored and cut in 1/4-inch dice
- 1 ounce sharp Cheddar cheese, cut in 1/4-inch dice
- 2 tablespoons fresh lemon juice
- Salt to taste
- 1 very small garlic clove, puréed
- 5 tablespoons extra virgin olive oil
- 2 tablespoons freshly grated Parmesan
World's Best Lasagna

Makes way more sauce than will fit in 13x9x2 pan
- 1 lb sweet Italian sausage
- 3/4 lb lean ground beef
- 1/2 cup minced onion
- 2 garlic cloves, crushed
- 1 (28 ounce) can crushed tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (6 1/2 ounce) cans canned tomato sauce
- 1/2 cup water
- 2 tablespoons white sugar (I use 1 T)
- 1 1⁄2 teaspoons dried basil leaves
- 1/2 teaspoon fennel seed
- 1 teaspoon italian seasoning
- 1 tablespoon salt (I use 1 teaspoon)
- 1/4 teaspoon ground black pepper
- 4 tablespoons chopped fresh parsley
- 12 lasagna noodles
- 16 ounces ricotta cheese
- 1 egg
- 1/2 teaspoon salt
- 3/4 lb mozzarella cheese, sliced
- 3/4 cup grated parmesan cheese
Whole Wheat/Grain Bread for Bread Machine

Put all of the ingredients into the bread pan in the order listed
- For 1 1/2 lb. bread machine:
- 1 1/4 cups water
- 2 tablespoons (7/8 ounce) olive or vegetable oil
- 1/4 cup honey or maple syrup
- 3 1/2 cups (14 ounces) King Arthur 100% White Whole Wheat or Traditional Whole Wheat Flour
- 1/4 cup sunflower, sesame, millet, or flax seeds, oatmeal or quinoa, or a combination
- 1 tablespoon vital wheat gluten
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons instant yeast

- 2 cups caputo flour (cake flour works too)
- 5 tablespoons butter, grated through a cheese grater and chilled
