Multigrain Pancakes

- Dry ingredients:
- 2/3 c whole wheat flour
- 1/3 c all purpose flour
- 1/4 c other flour or cornmeal - or an additional 1/4 c whole wheat flour
- 2 T wheat germ
- 2 t sugar
- 1 t baking powder
- 1 t baking soda
- 1/4 t salt
- Wet ingredients:
- 1 c lowfat buttermilk (or 1 c milk with 1 T vinegar)
- 1/4 c skim milk - more if needed to thin batter
- 1 egg white
- 1 whole egg
- 1 T oil
- 1/4 t vanilla

Chicken salad

- 2 cups chopped chicken (don’t use food processor)
- 1 boiled egg - chopped
- 2 ribs of celery, diced fine
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper (ground)
- Enough mayonnaise to moisten the mixture.
Wheat Bread for Bread Machine

In bread machine pan, place all ingredients in order suggested by manufacturer
- 1/2 cup warm milk (70° to 80°)
- 1/2 cup water (70° to 80°)
- 1 egg
- 3 tablespoons honey
- 2 tablespoons butter, softened
- 1-1/2 teaspoons salt
- 2 cups bread flour
- 1 cup whole wheat flour
- 1/4 cup potato flakes (my addition to original recipe)
- 2-1/4 teaspoons active dry yeast
Baked chicken

Mince garlic and bread slices in food processor until they become crumbs
- 2 cloves garlic
- 1 t basil
- 1 t oregano
- 1/2 t salt
- 3-4 slices of bread
- 1/2 c butter
- 8 !boned skinned chicken breast halves
Easy Chicken Provencale

Heat oil in large skillet and brown chicken parts well on all sides
- 1 T olive oil
- 1 1/2 pounds chicken parts
- 1 8 oz can whole tomatoes
- 3/4 t basil leaves
- 3/4 t onion powder
- 1/2 t salt
- 1/4 t garlic powder
- dash of black pepper
- 1 T white wine
- 1/4 sliced black olives
Whole wheat scones

- 1 1/2 c all purpose flour (I use 2 c and adjust whole wheat as noted below)
- 1 1/2 c whole wheat pastry flour (I use 1 c whole wheat flour since I don't have pastry flour)
- 1 T baking powder
- 1/2 t baking soda
- 1/4 t salt (perhaps a bit more)
- 1/2 c brown sugar
- 8 T butter - cold and cut into 1 T pieces
- 1 c mixture* of dried fruit, nuts, chocolate, or carob chips
- 1 c buttermilk
- Grated rind of one orange is good addition mixed with dry ingredients.
Chicken casserole

- 3 chicken breasts cooked and cut into small pieces
- 8 oz. sour cream (light okay)
- 1 can cream of chicken soup
- 1 1/2 c chicken broth
- 1 1/2 sticks butter or margarine
- 1 package of corn bread stuffing

Set oven rack in middle position
- 2 1/4 cups cake flour (9 ounces), plus more for dusting the pans - can substitute all purpose flour with 2 T of corn starch replacing 2 T flour per cup
- 1 cup whole milk, at room temperature - 2% works fine
- 6 large egg whites (3/4 cup), at room temperature
- 2 teaspoons almond extract - I used 1 tsp
- 1 teaspoon vanilla extract
- 1 3/4 cups granulated sugar (12 1/4 ounces)
- 4 teaspoons baking powder
- 1 teaspoon table salt
- 12 tablespoons unsalted butter (1 1/2 sticks), softened but still cool
Banana bran muffins

Stir together flour, baking powder, sugar, salt and spices and set aside
- 1 c all purpose flour or 1/2 c each whole wheat and all purpose)
- 1 T baking powder
- 1/4 c sugar (less?)
- 1/2 t salt
- 1/2 t cinnamon
- 1/2 t nutmeg
- 1/2 c nuts
- 2 c bran flakes cereal
- 2/3 c milk - lowfat okay
- 2/3 c mashed ripe bananas (about 2)
- 2 egg whites (or one egg)
- 1/4 c canola oil
- 1/2 t vanilla
