Sturdy Cream Cheese Frosting

It's real—a light yet sturdy cream cheese frosting that will hold its shape
- 2 c. heavy cream, chilled
- 1 c. powdered sugar
- 1 tsp. cream of tartar
- 1 tsp. pure vanilla extract
- 8 oz. cream cheese, chilled
Summer Spiced Healthy Zucchini Muffins - Recipes at Penzeys Spices

Preheat oven to 400°. Coat 12 muffin tins with cooking spray
- 1 Cup whole-wheat flour
- 2/3 Cup all-purpose flour
- 1/2 Cup sugar
- 1 TB. (Desiree likes it heaping) PENZEYS CINNAMON
- 1/4 tsp. GROUND ALLSPICE
- 1/4 tsp. GROUND CLOVES
- 11/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. SALT (Desiree uses KOSHER-STYLE FLAKE SALT)
- 11/3 Cups shredded zucchini (1 medium), peeled if desired
- 1/2 Cup milk
- 2 TB. oil (Desiree uses grapeseed oil)
- 2 TB. honey (Desiree uses local honey)
- 1 large egg
Baked brie with apples, almonds and cranberries

Slice brie in half - into two layers
- 1 8 oz. round of brie
- 1/2 c chopped apple
- 1/4 c sliced almonds
- 1/4 c dried cranberries (craisins)
- 1 T brown sugar
- 1/4 t cinnamon
- 1 T butter melted
Sweet Potato Casserole

Roasting potatoes Adjust oven rack to lower-middle position and heat oven to 400°
- 7 lbs. (6-8 medium) sweet potatoes
- 5 Tbl unsalted butter, melted
- 2 tsp salt
- 1/2 tsp ground nutmeg
- 1/2 tsp ground black pepper
- 1 Tbl vanilla extract
- 4 tsp juice from 1 lemon
- 4 Lg egg yolks
- 1 1/2 cups half and half
- granulated sugar to taste
- Streusel
- 5 Tbl unsalted butter, cut into 5 pieces
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 tsp salt
- 1 cup (4 oz.) pecans
Sour Cream Cornbread

Preheat oven to 425°. Stir together corn, sour cream, eggs, and oil in a large bowl
- 1 cup self-rising cornmeal
- 1/2 tsp salt
- 1 cup cream-style corn
- 1 cup light sour cream
- 2 large eggs, lightly beaten
- 1/2 cup oil
Ice cream pie

Pack ice cream into the graham cracker pie crust and put in the freezer to harden
- 1 graham cracker pie crust, 9 inch
- 1/2 gallon vanilla ice cream -- slightly softened
- 3 egg whites (room temperature)
- 3 T powdered sugar
- dash salt
- 2 -3 T marshmallow cream
- 1 can sweetened condensed milk
- 2 squares baking chocolate
- dash salt
- 1 teaspoon vanilla
- 1/2 cup boiling water (may need 1 cup)
Original Plum Torte

Heat oven to 350 degrees. Cream the sugar and butter in a bowl
- 3/4 to 1 cup sugar
- 1/2 cup unsalted butter
- 1 cup unbleached flour, sifted
- 1 teaspoon baking powder
- Pinch of salt (optional)
- 2 eggs
- 24 halves pitted purple plums
- Sugar, lemon juice and cinnamon, for topping
Chocolate Zucchini Muffins

From Recipes at Penzeys Spices: Wonderfully easy and a real treat for lunch
- 1/2 Cup room temperature butter (1 stick)
- 1/2 Cup vegetable oil
- 1 3/4 Cups white sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 1/2 Cup milk mixed with 1/4 tsp. white vinegar
- 2 1/2 Cups all-purpose flour
- 4 TB. cocoa
- 1 tsp. baking soda
- 1/4-1/2 tsp. cinnamon
- 1/2 tsp. salt
- 2 Cups peeled and finely grated zucchini - 3 small zucchini
- 1 Cup chocolate chips
- 1/4 Cup chopped nuts (optional)
Low Carb Creamed Kale with Bacon and Walnuts

Instructions Cook the bacon in a large saute pan until golden but not quite crisp
- Substitute for mascarpone cheese:
- 4 slices raw bacon, chopped
- 1 Tbsp butter
- 2 cloves garlic, minced
- 1/2 cup unsweetened almond milk
- 1/4 tsp ground nutmeg
- 10 cups raw kale, chopped
- 1 cup mascarpone cheese*
- 1/3 cup grated parmesan or romano cheese
- salt and pepper to taste
- 1/4 cup walnuts, chopped
- Blend 8 oz softened cream cheese with 1/4 c whipping cream
- OR Blend 8 oz softened cream cheese with 2 T butter and 1/4 c cream
- OR Blend 8 oz softened cream cheese with 1/8 c whipping cream and 1/8 c sour cream
Chewy Oatmeal Zucchini Cookies

- 1 cup old-fashioned rolled oats
- 3/4 cup quick-cooking instant oats
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/8 teaspoon freshly grated nutmeg
- 1/2 cup loosely packed brown sugar
- 6 tablespoons unsalted butter, melted
- 1 large egg yolk
- 2 tablespoons milk
- 1 teaspon vanilla extract
- 1 cup freshly grated zucchini squash
- 3/4 cup chocolate chips
