Matt’s Dakota Bread I

Matt's version (Savvy Baker website) of Dakota Bread from Great Harvest Bread Co
- 1 1/2 cups water
- 1/4 cup honey
- 3 tablespoons butter, margarine or canola oil
- 1 teaspoon salt
- 3 cups bread flour
- 1/2 cup rolled oats (not instant)
- 2 tablespoons vital wheat gluten
- 1 1/2 teaspoons rapid or instant yeast
- Add-ins
- 1/2 cup sunflower seeds
- 1/3 cup crushed walnuts (not in GH bread)
- 1/4 cup pumpkin seeds
- 2 tablespoons sesame seeds
- 2 tablespoons flaxseed
- 1 tablespoon poppy seeds
- Optional Topping
- A handful of rolled oats, sunflower seeds, pumpkin seeds or sesame seeds
Crunchy-Topped Whole-Wheat Plum Cake

Preheat the oven to 400 degrees
- 1/2 cup (1 stick) unsalted butter, at room temperature, plus more to grease pan
- 1 1/2 pounds plums, preferably several varieties, pitted and sliced
- 1 1/4 cups plus 2 tablespoons whole-wheat flour
- 1/2 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 cup plus 2 tablespoons sugar
- 2 tablespoons Cognac or brandy
- 1 teaspoon vanilla
- 1 large egg
- 1/2 cup milk
- 2 tablespoons Demerara sugar, for sprinkling
- Whipped cream, for serving (optional)
Creamy marinated artichoke pasta sauce

Drain marinade from jar of artichoke hearts into a skillet
- 1 8oz. jar marinated artichoke hearts
- 1 T olive oil
- 1 T butter
- 1 large onion chopped
- 1 t dried basil or 1 T fresh
- 1/2 c cottage cheese
- 1/2 c sour cream
- Salt and pepper to taste
- Grated Parmesan cheese to taste
- 1/2 lb pasta cooked and drained
Elevator Lady Spice Cookies

- 1 C Sugar
- 1 Egg -- unbeaten
- 1/4 C Molasses
- 2 C Flour
- 2 tsp Baking Soda

Creamy Crockpot White Chicken Chili

Instructions Add chicken breasts to bottom of slow cooker, top with salt, pepper, cumin, oregano, chili powder, ...
- 1 lb boneless skinless chicken breasts trimmed of excess fat
- 1 yellow onion diced
- 2 cloves garlic minced
- 24 oz. chicken broth (low sodium)
- 2 15oz cans great Northern beans drained and rinsed
- 2 4oz cans diced green chiles (I do one hot, one mild)
- 1 15oz can whole kernel corn drained
- 1 tsp salt
- 1 /2 tsp black pepper
- 1 tsp cumin
- 3 /4 tsp oregano
- 1 /2 tsp chili powder
- 1 /4 tsp cayenne pepper
- small handful fresh cilantro chopped
- 4 oz reduced fat cream cheese softened
- 1 /4 cup half and half
- Possible toppings
- sliced jalapenos
- sliced avocados
- dollop of sour cream
- minced fresh cilantro
- tortilla strips
- shredded Monterey jack or Mexican cheese
Quiche Lorraine

In medium bowl, mix flour and salt
- Crust
- 1 cup Gold Medal™ all-purpose flour
- 1/4 teaspoon salt
- 1 /3 cup shortening
- 2 to 3 tablespoons cold water
- Filling
- 8 slices bacon, crisply cooked, crumbled (1/2 cup)
- 1 cup shredded Swiss or Cheddar cheese (4 oz)
- 1 /3 cup finely chopped onion
- 4 large eggs
- 2 cups whipping cream or half-and-half
- 1 /4 teaspoon pepper
- 1 /8 teaspoon ground red pepper (cayenne)
Spicy Baby Eggplants

Heat 1 tablespoon of oil in a sauté pan with mustard seeds and cover tightly with a matching lid
- 1/2 lb baby eggplants, sliced into 8 pieces lengthwise
- 2 tablespoons canola oil, divided
- 1/4 teaspoon mustard seeds
- 1/2 cup red onion, diced to medium-sized pieces
- 3-4 garlic cloves, minced
- 1/2-inch piece ginger root, peeled and finely minced
- 1/2 teaspoon red chili flakes
- 1 teaspoon coriander powder
- 1/8 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 1 teaspoon salt (to taste)
- A few kari patha (curry) leaves (optional)
Cheese Wafers (Straws, Cookies)

Directions Blend softened butter with grated cheese
- 1 cup butter, softened
- 8 ounces sharp cheddar cheese, grated
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon garlic powder
- 1 teaspoon cayenne powder
- 1 teaspoon Worcestershire sauce
- 2 cups all-purpose flour
- 1 1⁄2 cups rice, krispies
Sweet Potato Pancakes

In a large bowl, combine all ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 4 teaspoons baking powder
- 2 tablespoons brown sugar
- 1 teaspoons cinnamon
- Pinch nutmeg
- 2 cups milk
- 4 teaspoons melted butter, plus more for greasing skillet
- 2 whole eggs
- 1 sweet potato, cooked until tender, peeled and pureed
- Pecan butter, recipe follows
- Maple syrup, for serving
- 1/4 cup finely chopped pecans toasted and cooled
- 1/2 pound butter, softened
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 tablespoon brown sugar
- 1 tablespoon honey

- Custard:
- 1/4 cup cornstarch
- 1 1/4 cup whole milk (1/2 percent works fine)
- 2 large eggs
- 2 large egg yolks
- 1 cup heavy cream
- 3/4 teaspoon kosher salt
- 1/8 teaspoon nutmeg
- Zucchini mixture - see below for alternative fillings:
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 2 small zucchini, grated
- 1/4 cup grated Gruyere or Parmesan cheese
- Fresh basil, finely chopped
