Wild Rice Pilaf

Cook the rice as directed (1 cup wild rice mix equals approximately 1-1/2 to 2 cups cooked rice)
- 2 tablespoons butter
- 1/4 cup vegetable oil
- 1 medium onion, minced
- 2 large stalks celery, coarsely chopped
- 4 cups cooked wild rice mix
- 3/4 cup dried red tart cherries
- 1/2 cup chopped pecans
- 3 or 4 scallions, finely chopped
Key Lime Pie Tarts

I used four 4.75" tart pans
- For Crust:
- 1 1/4 cups of graham cracker crumbs (approximately 9 cracker sheets)
- 2 Tbs sugoar
- 5 Tbs unsalted butter, melted
- For Filling:
- 1 (14 oz) can of sweetened condensed milk
- 5 large egg yolks
- 1/2 cup of Key Lime Juice
- For Topping:
- 3/4 cup chilled heavy cream
- 2 Tbs powdered sugar
Salmon Patties

- 1 egg
- 1/2 cup Italian bread crumbs
- 1/2 tsp. salt
- 1/2 tsp. pepper

- For meatballs:
- 2 lbs. bulk pork sausage (one hot and one plain)
- 2 eggs, beaten slightly
- 3/4 cup soft bread crumbs
- For sauce:
- 1-1/2 cups ketchup
- 1/2 cup brown sugar
- 1/4 cup white wine
- 1/4 cup white vinegar
- 1/4 cup soy sauce

- Alternate ingredients for salsa:
- CINNAMON CHIPS
- 1 tablespoon sugar
- 1/4 teaspoon ground cinnamon
- 8 (7-inch) flour tortillas
- SALSA
- 2 medium Granny Smith apples (chopped)
- 1 pint strawberries, diced (about 1-1/2 cups)
- 2 kiwi, peeled and diced
- 1 small orange
- 2 tablespoons packed brown sugar
- 2 tablespoons apple jelly or apricot jam
- 1 cup frozen raspberries
- 2 peaches, peeled and chopped
- 2 kiwifruit, peeled, sliced and chopped
- 1 teaspoon lime zest
- 2 teaspoons lime juice
- 1 teaspoon sugar
