Apple Berry Salsa with Cinnamon Chips

Ingredients

  • Alternate ingredients for salsa:
  • CINNAMON CHIPS
  • 1 tablespoon sugar
  • 1/4 teaspoon ground cinnamon
  • 8 (7-inch) flour tortillas
  • SALSA
  • 2 medium Granny Smith apples (chopped)
  • 1 pint strawberries, diced (about 1-1/2 cups)
  • 2 kiwi, peeled and diced
  • 1 small orange
  • 2 tablespoons packed brown sugar
  • 2 tablespoons apple jelly or apricot jam
  • 1 cup frozen raspberries
  • 2 peaches, peeled and chopped
  • 2 kiwifruit, peeled, sliced and chopped
  • 1 teaspoon lime zest
  • 2 teaspoons lime juice
  • 1 teaspoon sugar

Preparation

Step 1

FOR CINNAMON CHIPS

1. Preheat oven to 400°F.
2. Combine sugar and cinnamon.
3. Lightly spray tortillas with water; sprinkle with cinnamon-sugar mixture.
4. Using a pizza cutter, cut each tortilla into 8 wedges; place in single layer on a stone or baking sheet
5. Bake 8-10 minutes or until lightly browned and crisp. Remove to a cooling rack
6. Repeat for remaining tortilla wedges
7. Cool completely.


FOR SALSA

1. Peel, core, slice and chop apples. Dice strawberries and kiwi. Place all fruit in mixing bowl.
2. Zest orange to measure 1 teaspoon zest. Juice orange to measure 2 tablespoons.
3. Mix together orange zest, juice, brown sugar and jelly and then add to fruit mixture. Mix gently.
4. Refrigerate until ready to serve.
5. Spoon into serving bowl and serve with cinnamon chips
