Pork - Texas Stewed Pork

Bring meat to room temperature and pat dry
- 3 pounds pork shoulder/pork butt
- Kosher salt and black pepper
- 2 tablespoons vegetable oil
- 6 slices good quality, lean, smoky bacon, chopped into 1-inch pieces
- 2 carrots, chopped
- 2 ribs celery, chopped
- 1 large onion, chopped
- 4 cloves garlic, sliced or chopped
- 1 tablespoon cumin, a scant palmful
- 1 tablespoon ground coriander, a scant palmful
- 1 small cinnamon stick
- 2 fresh bay leaves
- 1 tablespoon fresh oregano or 1 teaspoon dried
- 2 to 3 tablespoons puréed chipotle in adobo (for a medium to spicy heat level)
- 1 12-ounce bottle lager beer, at room temperature
- 1 quart chicken stock
- 1 red onion, cut into 1-inch wedges
- 1 large red pepper, chopped into 1-inch pieces
- 1 28-ounce can fire-roasted tomatoes
- Juice of 1 lime
- 1/4 cup cilantro leaves, chopped
- Corn Tortillas, charred
VEGETABLE BOURSIN CREAMED SPINACH

PREHEAT OVEN TO 425. COAT A SHALLOW 2 CUP BAKING DISH WITH A NONSTICK SPRAY; SET ASIDE
- FOR THE SPINACH FILLING
- 1/2 C DICED ONION
- 1 TBSP. UNSALTED BUTTER
- 2 TBSP. ALL PURPOSE FLOUR
- 1 C MILK
- 1/2 HEAVY CREAM
- 1 PKG. BOURSIN GARLIC & FINE HERB CHEESE 5.2 OZ.
- 1 PKG FROZEN CHOPPED SPINACH, THAWED AND SQUEEZED DRY OF EXCESS MOISTURE 10 OZ.
- 2 TBSP. GRATED PARMESAN
- 1 TSP. MINCED LEMON ZEST
- FOR THE CRUMB TOPPING
- 2/3 C COARSE FRESH BREAD CRUMBS(MADE WITH FROM 2 SLICES OF FIRM WHITE BREAD)
- 1 TBSP. UNSALTED BUTTER, MELTED
- 1 TBSP. OLIVE OIL
- SALT AND PEPER
Palomilla Patty Melts with Yellow Mustard Slaw

Preheat broiler and place the baking rack in center of the oven
- 1 1/2 * 1 1/2 pounds ground sirloin
- 1 1/2 * 1 1/2 teaspoons ground marjoram or oregano, half a palmful
- 1 1/2 * 1 1/2 teaspoons ground cumin, half a palmful
- 1/4 * 1/4 cup loosely packed cilantro leaves, a handful, finely chopped
- 3 to 4 * 3 to 4 tablespoons grated onion
- 3 to 4 * 3 to 4 cloves garlic, finely chopped
- * Salt and pepper
- 1 * 1 tablespoon EVOO - Extra Virgin Olive Oil
- 1 * 1 lime
- 4 * 4 slices Swiss cheese
- 8 * 8 slives good quality white bread, toasted
- * Butter, for toast
- 1/4 * 1/4 cup yellow mustard
- 3 * 3 tablespoons dill relish
- 1/4 * 1/4 cup honey or agave syrup
- 1/3 * 1/3 cup vegetable oil
- 1 * 1 pound slaw salad mix
- * Plantain chips
Onion Rings

In a fryer, heat shortening or oil to 350 degrees
- 6 to 10 * 6 to 10 cups vegetable shortening
- 1 * 1 medium white onion
- 2 * 2 cups milk
- 2 * 2 cups all purpose flour
- 2 * 2 cups plain Progresso bread crumbs salt
Vegitarian - Ratatouille & Ricotta-Stuffed Peppers

Heat oven to 425°F. Halve the peppers and seed them
- 4 large frying or bell peppers
- Olive oil, for drizzling
- Salt and pepper
- 3 cups ricotta cheese
- 1 10-ounce package chopped frozen spinach, defrosted and drained well
- 1 egg yolk
- 1 1/2 cups grated Fontina or young Asiago cheese
- 1/2 cup grated Parm cheese
- 4 cups ratatouille, warmed
Salad Cherry Tomato and Asparagus

Boil asparagus for 2 min and rinse cold water w ice cubes Mix asparagus w remaining ingredients
- 1 # asparagus trimmed and halved
- 6 cups cherry, pear, grape tomatoes
- in varied colors halved
- Optional. 1/2 cup crumbled gorgonzola
- 1 ripe avocado cubes
- 1 cup sliced basil leaves
- 1/4 c olive oil
- 2 tsp lemon juice
- 2 tsp Dijon mustard
- 1/2 tsp salt and pepper
Crockpot Ranch Pork chops

- 1 can Mexican blend corn (DRAINED)will only use about 1/2 can
- 4-5 large flour tortillas
- 8 oz of thick chunky salsa (your choice mild or hot)
