Preheat oven to 350°. Score zucchini (like you’re dicing an avocado) and scoop out insides into a large bowl
- 4 4 4 zucchini, halved lengthwise

- 1/2 1/2 1/2 onion, chopped
- 2 2 2 cloves garlic, minced
- 1 1 1 lb. ground beef
- 1/2 1/2 1/2 tsp. chili powder
- 1/2 1/2 1/2 tsp. ground cumin
- 1/4 1/4 1/4 tsp. paprika
- Kosher salt
- Freshly ground black pepper
- 1 1 can 1 (15-oz.) can black beans
- 1 1 1 c. chopped cherry tomatoes
- 1/2 1/2 1/2 c. corn
- 1 1 1 c. shredded cheddar
- 1 1 1 c. shredded monterey

Cut bacon into 1 inch pieces and fry, spread in bottom of 3 qt pot
- 4 slices bacon
- 3 cups diced potatoes
- 1/2 cup chopped onions

- 2 2 1 cups cooked and shredded chicken (from about 1 lb)
- 4 4 1/2 medium zucchini (2 1/2 lbs), sliced in half through length*
- 1 1/2 1 1/2 1/2 Tbsp olive oil
- 1/2 1/2 1/2 cup finely chopped yellow onion (be sure they are chopped fine or they won't cook through)
- 2 2 2 cloves garlic
- 1 1 oz) 1 (15 oz) tomato sauce
- 1 1 1 Tbsp ancho chili powder
- 1 1 1 Tbsp chili powder
- 1 1 1 tsp ground cumin
- 1/2 1/2 1/2 tsp paprika
- 2/3 2/3 2/3 cup water
- 1 1/2 1 1/2 1/2 tsp cornstarch
- 2/3 2/3 2/3 cup frozen corn
- 1 1/4 1 1/4 1/4 cups shredded Mexican blend cheese
- For serving: diced Roma tomatoes , chopped cilantro, chopped yellow onion (optional), light sour cream (optional)
Crock Pot Rosemary Cornish Game Hen
