  • 1 * 1 pound penne rigate or whole grain penne rigate pasta

  • 1 * 1 tablespoon ground coriander, about a palmful
  • 1 1/2 * 1 1/2 tablespoons ground cumin, about 1/2 palmful
  • 1/4 * 1/4 cup tomato paste
  • 1 * 1 12-ounce bottle beer or cups chicken stock
  • 2 * 2 cups shredded cheddar, Monterey jack or any Mexican semisoft cheese
  • 2 * 2 small plum tomatoes, seeded and chopped
  • 1/4 * 1/4 head iceberg lettuce or 1/2 small heart romaine lettuce, chopped

  • 1 small/medium eggplant
  • 1 pint cherry or grape tomatoes

  • 1/4 tsp ground black pepper
  • 2/3 cup freshly grated parmesan cheese, divided
  • 1/4 cup chopped fresh basil, divided
  • 1/4 cup chopped fresh parsley, divided

Now mix wings and sauce together in a very large bowl holding back about 1 cup of the sauce

  • 2 cups of ketchup
  • 3/4 cup brown sugar
  • 2 tbs spoons of honey, or dark brown karo, and Soy sauce or
  • Teryiaka sauce
  • 4-5 fine chopped garlic or through a garlic press
  • 1 tb spoon of Worchesteshire sauce
  • 1 tsp of yellow mustard
  • 1/2 teaspoon of liquid smoke
  • Tabasco to taste start with 10 to 12 shakes we are up to 25 and climbing.
  • Juice of 1/2 orange I also use a micro planner and plane about 1 tsp of orange zest for an orangier flavor.
  • Simmer for 30 min.
