Seared Scallops With Snow Peas and Orange

Cook the couscous according to the package directions
- 1 cup couscous
- 2 teaspoons plus 1 tablespoon olive oil
- 16 sea scallops (about 1 1/2 pounds)
- kosher salt and black pepper
- 1 orange
- 3/4 pound snow peas, halved lengthwise
Pork Chops with Peppers and Onions

Place chops on a plate. Combine fennel, red pepper flakes, granulated garlic, onion and paprika
- 4 * 4 pork chops, bone-in, 1 inch thick
- 2 * 2 teaspoons fennel seeds
- 1 * 1 teaspoon crushed red pepper flakes
- 1 * 1 teaspoon granulated garlic
- 1 * 1 teaspoon granulated onion
- 2 * 2 teaspoons paprika
- * Salt and pepper
- 4 * 4 tablespoons EVOO – Extra Virgin Olive Oil
- 2 * 2 cubanelle peppers, seeded and thinly sliced
- 1 * 1 red bell pepper, seeded and thinly sliced
- 2 * 2 onions, quartered lengthwise, then thinly sliced
- 3 to 4 * 3 to 4 cloves garlic, chopped or thinly sliced
- 2 * 2 tablespoons tomato paste
- 1 * 1 cup white wine or chicken stock

- 1 lb ground sirloin beef
- 1 lb spicy ground sausage
- 1 link linguica (Silva brand mild)
- 2 cloves minced garlic
- 1 yellow onion chopped
- 1 lg can crushed tomatoes
- 1 can Del Monte Spaghetti Sauce (any flavor)
- 1 palm full of Italian Seasoning
- 1 package 10 oz sliced mushrooms
- 1 lg container Precious Ricotta Cheese
- 1 lg ball Precious Mozarella Cheese
- 1 package of Fresh Parmeasean, Shredded
- 1 package Bartolli Oven Ready Lasagna Noodles (label does not matter, just make sure they are oven ready, you don't have to boil them ahead)
- Red Wine to taste, approx 1 cup

Slow Cooker Pot Roast

Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper
- One 4-pound beef chuck roast
- Kosher salt and freshly ground black pepper

In crockpot add raw stew beef, soups seasonings and mix well
- 2 lbs of stewing beef..not tenderized...the big chunk type is the best and wont fall apart like the tenderized does
- 1 can of Campbells Cream of Onion soup
- 1 can of Campbells Golden Mushroom soup
- 1 cup of diced yellow onion
- Large tub of sliced fresh mushrooms...not sure the oz. size..maybe
- 8 oz.?
- 1 8oz tub of sour cream
- 1 8oz pkg of philadelphia cream cheese cubed
- salt and pepper to taste and also a dash or two of garlic powder
Teriyaki Chicken & Pineapple Skewers

Soak six 8-inch skewers in water for at least 30 minutes
- 1 tablespoon extra-virgin olive oil
- 3 cloves garlic, crushed
- 3/4 teaspoon peeled and crushed fresh ginger
- 1/2 cup soy sauce
- 1/4 cup apple cider vinegar
- 1/2 cup brown sugar
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon cornstarch
- 1 tablespoon water
- 12 boneless, skinless chicken thighs, cut into chucks

Corn and Avocado Salad

In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone

- 4 ripe Hass avocados, seeded, peeled, and 1/2-inch diced
- Juice of 1 lemon
- 2 pints grape tomatoes, sliced in half lengthwise
- 2 red bell peppers, seeded and 1/2-inch diced
- 1 cup chopped red onion
- 1/4 cup seeded and minced jalapeno peppers, seeded
- 1 lime, zested
- 1/2 cup freshly squeezed lime juice
- 1/4 cup good olive oil
- 1 teaspoon freshly ground black pepper
- 1 teaspoon minced garlic
- 1/2 teaspoon ground cayenne pepper
