Start by making the meringue discs: preheat the oven to 160ºC/320ºF
- Almond meringue:
- 4 egg whites
- 120 g confectioners’ sugar
- 20 g corn starch
- 100 g almond meal/ground almonds
- Genoise:
- 3 eggs, egg whites and yolks separated
- 3 tablespoons hot water
- 80 g confectioners’ sugar, sifted
- 10 g caster sugar
- 50 g all purpose flour
- 50 g corn starch
- pinch of baking powder
- Buttercream:
- 150 g unsalted butter, room temperature
- 150 g confectioners’ sugar, sifted
- 1 egg yolk
- 50 g currant jam – I used blackberry jam
- Syrup:
- 4 tablespoons water
- 20 g caster sugar
- 120 ml kirsch
- For sprinkling:
- 100 g almonds, toasted and chopped – I kept the skin to add some color to the cake
- 70 g confectioners’ sugar
MOCK SHAKE AND BAKE

SPICY MUSTARD SHRIMP WITH CHARD

Sauté the shrimp with onion, garlic, Bragg's, vinegar, lemon juice and mustard until cooked
- 100 grams shrimp
- Chard chopped
- 1/2 cup vegetable broth or water
- 3 tablespoons homemade mustard
- 2 tablespoons Bragg's liquid aminos
- 1 tablespoon apple cider vinegar
- 2 tablespoons lemon juice
- Pinch of red pepper flakes
- 2 tablespoons chopped onion
- 2 cloves garlic sliced
- Salt and pepper to taste
- Sauté the shrimp with onion, garlic, Bragg's, vinegar, lemon juice and
- mustard until cooked. Remove the shrimp and deglaze the pan with the
- vegetable broth. Add chard to the broth and cook stirring occasionally until
- chard is tender. Add a little water if needed. Top with mustard shrimp and
- enjoy.
- Makes 1 serving (1 protein, 1 vegetable)
- Phase 3 modifications: Cook with a little olive oil, sesame oil or walnut oil.
- Top with 2 tablespoons chopped roasted almonds.
BONELESS HOT WINGS

- 100 g chicken breast tenders
- 1/4 c vinegar
- 1/4 c water
- 1-2 T cayenne pepper
- 1-2 T chili powder (adjust as needed)

Cold Chicken Curry Salad

- 1 clove of garlic crushed and minced
- 1/4 teaspoon curry powder or to taste
- Dash of garlic powder
- Dash of onion powder
- Dash of cayenne pepper
- Dash of cinnamon
- Dash of turmeric
- Stevia to taste
