- salt to season
- 2 cups of oil.
Szechuan Noodles with Chicken and Broccoli

Preheat the oven to 350 degrees F
- 3 whole (6 split) chicken breasts, bone-in, skin-on
- Good olive oil
- Kosher salt and freshly ground black pepper
- 1 bunch broccoli, cut into florets and stems discarded
- 6 garlic cloves, chopped
- 1/4 cup fresh ginger, peeled and chopped
- 1/2 cup vegetable oil
- 1/2 cup tahini (sesame paste)
- 1/2 cup smooth peanut butter
- 1/2 cup good soy sauce
- 1/4 cup dry sherry
- 1/4 cup sherry vinegar
- 1/4 cup honey
- 1/2 teaspoon Asian hot chili oil
- 2 tablespoons dark toasted sesame oil
- 1/8 teaspoon ground cayenne pepper
- 1 pound spaghetti
- 4 scallions, sliced diagonally (white and green parts)
- 1 yellow bell pepper, julienned
- 1 red bell pepper, julienned
PINEAPPLE CHEESE BALL

Combine all ingredients together
- 1-1/2 packages (12 oz) cream cheese
- 1 small can crushed pineapple (well drained)
- powdered sugar (to taste- approximately 2-3 Tbsp.)
- green onion (optional-to taste, approximately 2 Tbsp.)
- chopped ham (optional-to taste, approximately 2-3 Tbsp. I used deli meat ham)
- chopped pecans (about 1 cup worth)

Prepare Guacamole & set aside
- Guacamole
- 4 Poblano Chiles; roasted and peeled
- 1 Onion; Medium, cut in halves
- 1 Pound Center Loin Roast; cut in 2" X 1/4" strips
- 1 Clove Garlic; Finely Chopped
- 2 teaspoon Vegetable Oil
- 2 teaspoon Tomato Paste
- 1 teaspoon Red Wine Vinegar
- 1/4 teaspoon Salt
- 1/2 lb. plum tomatoes, finely chopped
- Flour or Corn Tortillas
- Sour Cream
Toasted Coconut Marshmallows

Sprinkle half the toasted coconut in an 8 by 12-inch nonmetal pan
- 7 ounces sweetened shredded coconut, toasted
- 1 recipe Homemade Marshmallow batter, recipe follows
- Confectioners' sugar
- 3 packages unflavored gelatin
- 1 1/2 cups granulated sugar
- 1 cup light corn syrup
- 1/4 teaspoon kosher salt
- 1 tablespoon pure vanilla extract
- Confectioners' sugar, for dusting
Peanut Sesame Noodles

- For peanut dressing
- 1/2 cup smooth peanut butter
- 1/4 cup soy sauce
- 1/3 cup warm water
- 1 tablespoon chopped peeled fresh ginger
- 1 medium garlic clove, chopped
- 2 tablespoons rice vinegar
- 1 1/2 tablespoons Asian toasted sesame oil
- 1 tablespoon honey
- 1 teaspoon dried hot red pepper flakes or a splash of the hot sauce or chili paste of your choice
- For noodles
- 3/4 lb dried soba nooodles (dried linguine fini or spaghetti will work in a pinch)
- 4 scallions, thinly sliced
- 1 red bell pepper, cut into 1/8-inch-thick strips
- 1 yellow bell pepper, cut into 1/8-inch-thick strips
- Half a seedless cucumber, thinly sliced
- 1 cup firm or extra-firm tofu, cubed
- 3 tablespoons sesame seeds, toasted
Chinese Cheesecake

Heat 1-inch of canola oil in large saute pan, to 325 degrees F
- Canola oil, for frying
- 8 tablespoons cream cheese
- 3 tablespoons ricotta cheese
- 2 1/2 tablespoons powdered sugar (1 1/2 for mix, 1 tablespoon for garnish)
- 1 egg
- 3 tablespoons milk
- 10 thick egg roll skins
- 1 cup raspberries, fresh preferred
- 1 tablespoon ground cinnamon

- 8 tablespoons (1 stick) unsalted butter, room temperature
- 2 large eggs

One-Pot Cajun Shrimp & Sausage Pasta
