- 2-3 Tablespoons extra-virgin olive oil , divided
- 2 small cloves garlic , pressed
- 2 cups fresh baby spinach
- Half of a yellow onion , finely chopped
- 1 medium green cabbage
- 1 1/4 lb ground turkey
- 3/4 cup shredded Mozzarella
- 1/2 cup uncooked rice
- 1/2 teaspoon Italian seasoning
- FLour
- Butter
- 2 cups broth
- 1/2 cup milk
- Salt and pepper

- 2 tsp. olive oil
- 1-1/2 lbs. Italian sausage
- 3 c. chopped onions
- 4 garlic cloves, minced
- 2 tsp. dried oregano
- 1/2 tsp. crushed red pepper flakes
- 2 T. tomato paste
- 1 28-oz. can fire roasted diced tomatoes
- 2 bay leaves
- 6 c. chicken stock
- 8 oz. mafalda or fusilli pasta
- 1/2 c. finely chopped fresh basil leaves
- salt and freshly ground black pepper, to taste
- 8 oz. ricotta
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. salt
- pinch of freshly ground pepper

- 2 Granny Smith apples
- 1 lemon
- 1 cup sugar
- 1/2 cup (1 stick) butter
- 1/4 teaspoon vanilla extract
- 8 canned buttermilk biscuits
- 4 teaspoons ground cinnamon
Baked Meatball Parmigiana

Mix all of the above meatball ingredients and form your meatballs-not too large
- 1 1/2 pounds meatloaf mix (beef, pork, veal combo)
- 4 cloves garlic-roughly chopped, not minced
- a handful of chopped parsley
- 1 cup bread crumbs (I used Schar brand)
- 1 cup shredded Parmesan cheese (not grated) (sometimes I use grated asiago cheese)
- 2 eggs
- salt to taste
- Sauce of your choice (approx two 24-oz jars)
- Mozzarella cheese to top it off with!

- You can make these healthy fritters with cup carrot, zucchini, corn, or beet.
- Carrot: Peel and grate 1 large carrot.
- Zucchini: Grate 1 medium zucchini, sprinkle with salt, let stand 30 minutes, and then squeeze dry.
- Corn: Cut kernels from 1 large ear corn.
- Beet: Peel and grate 1/2 medium beet.

- 4 cloves Garlic minced or pressed
- 1 teaspoon Fresh Thyme chopped
- 1 teaspoon olive oil
- 1 pound Green Beans ends snapped off and cut into two inch pieces
- Salt
- Black pepper ground
- 1/4 cup Water
- 2 teaspoon Lemon juice
- 1 tablespoon Fresh parsley chopped
