- 1/4 cups plain low-fat yogurt
- 1/2 teaspoon
- lemon juice
- 1/2 cup fresh mango pulp
- 1/3 cup cold water
- 1 to 2 tablespoons honey or sugar
- 9 to 10 standard-size ice cubes

Directions Sprinkle both sides of the eggplant slices with salt
- 1 eggplant, cut into 3/4 inch slices
- 1 1/2 tablespoons salt
