Vietnamese Tofu-Noodle Lettuce Wraps

1. Bring a large saucepan of water to a boil
- * 2 ounces thin rice noodles, or rice sticks (see Note)
- * 1/4 cup water
- * 5 teaspoons fish sauce, (see Note)
- * 2 tablespoons lime juice
- * 1 tablespoon sugar
- * 1/2-1 teaspoon crushed red pepper
- * 8 ounces firm or extra-firm seasoned tofu, thinly sliced
- * 1 medium carrot, cut into matchsticks
- * 1 cup snow peas, trimmed and very thinly sliced
- * 1/4 cup chopped fresh basil
- * 1/4 cup chopped fresh mint
- * 8 large leaves green-leaf lettuce
Costco Chicken Alfredo and Penne Pasta

- 1 jar of your favorite alfredo sauce (2 if you buy the smaller size)
- 1 rotisserie chicken (shredded)

Chicken Cutlets with Herbs

- 1/2 loaf baguette bread - day old is fine
- 4 pieces chicken breast halves
- Salt and freshly ground black pepper
- All-purpose flour, for dredging
- 1 large egg
- Several sprigs fresh thyme, leaves finely chopped
- 2 to 3 sprigs fresh rosemary, leaves finely chopped
- A handful fresh chives, finely chopped

- 300 ml (1 1/4 cups) milk

- 180 ml (3/4 cup) all-purpose flour or whole wheat flour
