- 3 tablespoons olive oil
- 1 garlic clove, minced
- 1 pound frozen artichoke hearts, thawed
- 2 tablespoons chopped fresh parsley leaves
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon red pepper flakes
- 1/2 cup chicken broth
- 1/4 cup Marsala wine
- 2 tablespoons butter
- 1/3 cup plain bread crumbs
- 1/3 cup grated Parmesan
Savory Swiss Chard

In a large skillet heat extra-virgin olive oil over medium-high heat
- 2 tablespoons extra-virgin olive oil
- 1 large bunch red or green or rainbow chard, stemmed and coarsely chopped
- Freshly grated nutmeg, about 1/4 teaspoon
- 1/2 teaspoon smoked sweet paprika or ground cumin
- Salt and freshly ground black pepper
- 1 teaspoon Worcestershire sauce
- 1/2 cup chicken stock
Parmesan Roasted Broccoli

Preheat the oven to 425 degrees F
- 4 to 5 pounds broccoli
- 4 garlic cloves, peeled and thinly sliced
- Good olive oil
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 teaspoons grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 3 tablespoons pine nuts, toasted
- 1/3 cup freshly grated Parmesan cheese
- 2 tablespoons julienned fresh basil leaves (about 12 leaves)

1. Preheat oven 375. 2. Grease and flour 2 layer cake pans 3
- 2 C. flour
- 2 C. sugar
- 1/4 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 4 eggs
- 1 1/2 C. vegetable oil
- 2-3 cups grated carrots
- Icing-
- 8 oz softened cream cheese
- 1/2 C. butter
- 1 tsp. vanilla
- 1 box confectioners sugar
Sweet Potato Casserole

1. Preheat oven to 400. Bake sweet potatoes at 400 for 1 hour
- 4 1/2 lb. sweet potatoes
- 1 C. sugar
- 1/2 C. butter, softened
- 1/4 C. milk
- 2 eggs
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1 1/4 C. cornflakes cereal, crushed
- 1/4 C. chopped pecans
- 1 Tbsp. brown sugar
- 1 Tbsp. melted butter
- 1 1/2 C. mini marshmallows
Chicken with Tarragon Cream Sauce

- Juice of 1 lemon
- 1/3 cup heavy cream
- 1/2 teaspoon kosher salt, divided
- 1 teaspoon plus 1/2 cup all-purpose flour, divided
- 1 teaspoon plus 1 tablespoon butter, divided
- 3 large boneless, skinless chicken breasts (about 1 1/2 pounds), trimmed
- 1/4 teaspoon ground white pepper
- 1 teaspoon peanut or canola oil
- 1 cup reduced-sodium chicken broth, divided, plus more as needed
- 1/2 cup frozen peas, thawed
- 3 tablespoons finely minced fresh tarragon or dill, plus sprigs for garnish
Brisket with Carrots and Onions

Preheat the oven to 350 degrees F
- 6 to 7 pounds beef brisket
- 2 tablespoons kosher salt
- 2 teaspoons freshly ground black pepper
- 1 tablespoon minced garlic (4 cloves)
- 2 teaspoons dried oregano leaves
- 1 pound carrots, peeled and cut into 2-inch chunks
- 8 stalks celery, cut into 2-inch chunks
- 6 yellow onions, peeled and sliced
- 6 fresh or dried bay leaves

- 1/4 cup brewed espresso or strong coffee
- 1 8-ounce carton mascarpone cheese
- 1 cup whipping cream

- 1/3 cup chocolate liqueur
- 1 ounce white chocolate baking squares or white baking bars, grated

- Ice cubes
- 3 ounces tequila
- 2 ounces freshly squeezed lime juice
- 1 ounce Simple Syrup, recipe follows
- 1/2 to 1 teaspoon orange liqueur
- 1 tablespoon Lime-salt-sugar, recipe follows
- 1 cup sugar
- 1 cup water
