Chicken Scallopine with saffron sauce

Warm the olive oil in a large skillet over high heat
- 2 tablespoons olive oil
- 1 pound chicken cutlets (scallopine)
- 2 shallots, sliced
- 1 clove garlic, minced
- 1/2 cup white wine
- 1 1/2 cups chicken broth
- 1/4 teaspoon saffron threads
- 1/2 cup heavy cream
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 tablespoons chopped fresh flat-leaf parsley
Chocolate Fondue

Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water
- 7 ounces good semisweet chocolate
- 1/3 cup heavy cream
- 1 1/2 teaspoons grated orange zest
- 1/2 teaspoon instant coffee granules
- 2 tablespoons orange-flavored liqueur (recommended: Grand Marnier)
- Directions
- For serving: pound cake, doughnuts, long-stemmed strawberries, bananas or pretzels

- 15 ounces ricotta cheese
- 3 to 4 ounces creamy goat cheese, crumbled
- 1 cup grated Parmesan, plus 1/4 cup for sprinkling
- 1 extra-large egg, lightly beaten
- 1 pound fresh mozzarella, thinly sliced
Sloppy Joes with corn

Heat oil in a large nonstick skillet over medium-high heat
- 1 teaspoon canola oil
- 1 cup finely chopped onion
- 1 cup finely chopped green bell pepper
- 2 garlic cloves, minced
- 1 1/2 pounds lean ground beef
- 1 (6-ounce) can no salt-added tomato paste
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 (14-ounce) can fat-free, less-sodium chicken broth
- 1 (15-ounce) can no salt-added corn, rinsed and drained
- 6 (1 1/2-ounce) whole wheat hamburger buns, toasted
Chocolate Hazelnut Tart

Preheat the oven to 325 degrees F
- 1/2 cup sugar
- 2 tablespoons all-purpose flour
- 3 eggs, beaten
- 1 1/2 cups peeled, chopped, and toasted hazelnuts
- 8 ounces bittersweet chocolate chips (about 1 cup)
- 1 cup corn syrup
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract

Gluten-Free Chocolate Peanut Butter Treats

1Place the sugar, corn syrup and peanut butter in a large saucepan over medium low heat
- 1 cup sugar
- 1 1/2 cups light corn syrup
- 1 1/2 cups peanut butter
- 6 cups gluten-free crisp rice cereal
- 1 cup semi-sweet chocolate chips
Gluten-Free Chili

Cook hamburger and vegetables until done
- 2 cans Heinz beans in tomato sauce
- 2 cans Heinz Chili style Kidney beans
- 1 can Hunts-Wesson tomato sauce
- 1 can tomatoes
- 1 small Imagine Tomato soup (if you can find this, just add extra tomato sauce)
- Extra lean hamburger
- 1 green pepper, diced
- 1 red pepper, diced
- 1 onion, diced
- 1 cup corn
- 2-4 tbl Chili powder, McCormick or Club house (add as much as you want)
Onion Dip

Cut the onions in half and then slice them into 1/8-inch thick half-rounds
- 2 large yellow onions
- 4 tablespoons unsalted butter
- 1/4 cup vegetable oil
- 1/4 teaspoon ground cayenne pepper
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 4 ounces cream cheese, at room temperature
- 1/2 cup sour cream
- 1/2 cup good mayonnaise
Chicken Tortilla Soup

Preheat oven to broil. Place tortillas strips on a baking sheet and broil until crisp and lightly browned
- 4 cups gf chicken broth
- 2 Tablespoons vegetable oil
- 2 cups cooked chicken, cut into bite size pieces
- 1/2 onion, chopped
- 1/2 cup fresh or frozen corn kernels
- 1/2 red bell pepper, chopped
- 2 Tablespoons cilantro, chopped
- 1/4 cup gf salsa
- 1/2 cup cooked Spanish rice, plain rice *optional
- 1 avocado, peeled and thinly sliced
- 2 corn tortillas, cut into 1/2" slices
- Salt and pepper to taste
Spicy Chicken and Rice Soup

Put oil in very hot pan, add chicken, onion and garlic
- 1 tablespoon oil
- 2 boneless chicken thighs, skin removed, cut in 1/2-inch cubes
- 1 cup chopped onion
- 4 medium cloves garlic, minced
- 1 package (10 ounces) frozen chopped spinach, thawed, moisture squeezed out
- 1 can chicken broth, low sodium, about 1 1/2 cups
- 3/4 cup salsa, medium
- 1/2 teaspoon jalapeno sauce
- 2 tablespoons chili powder
- 1/2 teaspoon cayenne pepper
- 1 can stewed tomatoes or 1 can Ro*tel diced tomatoes with green chiles
- 1 bay leaf
- 2/3 cup raw brown rice
