Brown the ground beef; drain well
- 1 pound lean ground beef
- 1 can (15 ounces) kidney beans
- 1 can (11 to 15 ounces) whole kernel corn, drained
- 1 10 oz can Rotel tomatoes
- 1 envelope taco seasoning
- 1 (28 oz) can tomatoes
- 1 sm can chopped chile peppers (4 ounces)
- 1 can (15 ounces) pinto beans
- 1 envelope Hidden Valley Ranch Dressing
Mexican Chicken Soup

Preheat the oven to 350 degrees F
- 4 split (2 whole) chicken breasts, bone in, skin on
- Good olive oil
- Kosher salt and freshly ground black pepper
- 2 cups chopped onions (2 onions)
- 1 cup chopped celery (2 stalks)
- 2 cups chopped carrots (4 carrots)
- 4 large cloves garlic, chopped
- 2 1/2 quarts chicken stock, preferably homemade
- 1 (28-ounce) can whole tomatoes in puree, crushed
- 2 to 4 jalapeno peppers, seeded and minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander seed
- 1/4 to 1/2 cup chopped fresh cilantro leaves, optional
- 6 (6-inch) fresh white corn tortillas
- Directions
- For serving: sliced avocado, sour cream, grated Cheddar cheese, and tortilla chips

1. Preheat oven to 350 degrees
- One half of a 12-ounce box of jumbo pasta shells (about 18 shells)
- 1 teaspoon salt
- 1 (15-ounce) container ricotta cheese
- 2 large eggs
- 1 cup grated parmesan cheese
- 2 cups grated mozzarella cheese
- 2 tablespoon chopped fresh parsley or mint (or 2 teaspoons dried)

- 1/2 cup vegetable oil
- 6 (4-ounces each) cube steaks

1. Preheat oven to 350°. Combine first 8 ingredients and 1/4 cup brown sugar in a medium bowl just until blended

- 1/2 green bell pepper, diced
- 1/2 onion, finely chopped

- 1 tablespoon Worcestershire sauce

- 1/2 cup firmly packed brown sugar, divided

Black Bean Soup with Shredded Pork

- 1 pound dried black beans, rinsed and picked over
