Fresh Basil and Tomato Risotto

A complete meal in itself, the Tomato Risotto with fresh basil is your answer to a quick and easy meal
- 2 cups chopped plum tomatoes
- 3 tablespoons chopped fresh basil
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 garlic cloves, minced
- 8 cups (or less) chicken broth
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cups arborio rice
- 1/2 cup dry white wine
- 2/3 cup shredded mozzarella cheese
- 1/2 teaspoon freshly ground pepper
- 1/3 cup grated Parmesan cheese

- 3-5 ice cubes
- 3 ounces of lime juice.
- 3 ounces of Ginger Ale OR substitute it with 7-Up or Sprite.
- Dash of grenadine.

The Creamiest Aïoli (Garlic Mayonnaise)

- 1 large egg yolk
- 1 small garlic clove, finely grated
- 1/4 teaspoon kosher salt plus more
- 1/4 cup grapeseed oil
- 1/4 cup good-quality extra-virgin olive oil
- Pinch of cayenne pepper
- Fresh lemon juice
- Freshly ground black pepper

- 1 to 1 -1/3 cup sugar
- 1 c margarine
- 1 tsp anise oil or 2 tsp vanilla and 2 tsp anise
- 6 large eggs, well beaten
- 4 cups flour
- 2 heaping teaspoons baking powder
- Pinch of salt

Mom's Recipe
- Nut Filling:
- 1 cup milk (1-1/2)
- ½ cup shortening (3/4)
- ½ cup sugar (3/4)
- 1 tsp salt (1-1/2)
- 1 small cake compressed yeast
- 3 beaten eggs (4)
- 4-1/2 cups flour (6-3/4)
- 1 lb ground walnuts
- 1 cup hot milk
- ¼ cup sugar
- 3 T butter
- 1/3 cup honey
- Combine and bring to a boil, stirring constantly.
- 2 beaten eggs
- ¼ tsp salt
- Add eggs and cook slowly until thick. Add salt. Cool and spread on dough.

- FRENCH TOAST
- 1 Brioche loaf (6 slices cut in 1 1/2-2-inch-thick slices) (OR! you can use challah if you like)
- 2 large eggs
- 2 large egg yolks
- 1 cup whole milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 3/4 teaspoon pure vanilla extract
- dash of cinnamon
- 1/2 teaspoon kosher salt
- 3 tablespoons of unsalted butter
- MACERATED STRAWBERRIES
- 1/2 pint of strawberries, hulled and quartered
- the juice of one lemon (some people use booze)
- 2 tablespoons of granulated sugar

1. Bring pot of water to boil
- 1 pound asparagus, tough ends trimmed & cut into 1-inch pieces
- 6 to 7 cups chicken or vegetable broth
- 2 Tablespoons extra-virgin olive oil
- 3 Tablespoons butter
- 2/3 cup red onion, diced
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- 1/4 teaspoon salt
- 1/2 cup Parmesan cheese, freshly grated
Strawberry Avocado Salad

In a small bowl, whisk together the sugar, olive oil, honey, vinegar, and lemon juice
- 2 tablespoons white sugar
- 2 tablespoons olive oil
- 4 teaspoons honey
- 1 tablespoon cider vinegar
- 1 teaspoon lemon juice
- 2 cups torn salad greens
- 1 avocado - peeled, pitted and sliced
- 10 strawberries, sliced

Ham, Gruyere and Apple Panini

In a 12-inch skillet, melt the butter over medium heat
- 2 T unsalted butter, at room temperature
- Granny Smith apples, peeled, cored and cut into 1/4-inch thick slices
- 1 T chopped fresh thyme leaves
- 8 (1/2-inch) thick slices country-style white bread
- 1/2 cup whole-grain mustard
- 2 cups (8 ounces) shredded Gruyere
- 8 slices (8-ounces) Black Forest ham
