Strawberry Avocado Salad with Bacon Poppyseed Dressing

Love this Strawberry Avocado Salad! Perfect with grilled chicken or salmon for dinner
- DRESSING:
- 6 cups baby kale, prewashed
- 2 cups sliced strawberries
- 1 ripe avocado, sliced
- 4 slices bacon
- 1/2 cup mayonnaise
- 2 tablespoons sugar
- 2 tablespoons white vinegar
- 1/2 teaspoon poppy seeds
- Salt & pepper, to taste
Oreos and Cream Cheese Cupcakes

1. Preheat oven to 275 degrees
- 42 cream-filled sandwich cookies, such as Oreos, 30 left whole, and 12 coarsely chopped
- 2 pounds cream cheese, room temperature
- 1 cup sugar
- 1 tsp vanilla extract
- 4 large eggs, room temperature, lightly beaten
- 1 cup sour cream
- Pinch of salt
Spring Asparagus Risotto

Creamy risotto, cooked with Spring asparagus, fresh herbs, Parmigiano-Reggiano and a touch of lemon
- Ingredients:
- 4 1/2 cups low-sodium chicken or vegetable broth
- 2 tsp olive oil
- 1/3 cup shallots, chopped
- 1 cup arborio rice
- 2 oz dry white wine
- 3/4 lb thin asparagus spears, tough ends trimmed, cut 2-inches long
- 1-2 tsp fresh lemon juice
- 1/4 cup chopped fresh parsley
- 1/4 cup freshly grated Parmigiano-Reggiano, plus more for serving
- salt and fresh cracked pepper, to taste
- 1 tsp grated lemon zest for garnish
Grilled Eggplant Parmesan

Place eggplant rounds on a baking sheet and sprinkle generously with sea salt
- 2 medium eggplants, peeled and sliced into 1/4-inch thick rounds
- Olive oil
- 2 cloves garlic, minced
- Sea Salt and Pepper
- 28 ounce can crushed tomatoes
- 5 Roma tomatoes, sliced into 1/4-inch thick rounds
- 1/2 cup Bread crumbs
- 1/2 cup Parmesan cheese
- Basil leaves
- 1 lb. dried pasta (any shape will work)
Creamy Vinaigrette Dressisng

Combine the shallot, olive oil, vinegar, herbs, and mustard in a bowl and whisk to form an emulsion
- 1 shallot, finely chopped
- 1/2 cup extra virgin olive oil
- 1/4 cup white wine vinegar
- 2 T chopped fresh parsley or chives
- 1 tsp Dijon mustard
- 1/4 cup heavy caream
- Salt and Pepper to taste
Pumpkin Ravioli with Sage Butter

To make the filling, preheat an oven to 400ºF
- 1-lb. piece Cheese or Sugar Pie pumpkin, calabaza or butternut squash, seeds and strings removed
- 1 egg yolk, lightly beaten
- 2 Tbs. grated Parmigiano-Reggiano or grana padano cheese
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. fine sea salt
- 1 to 2 Tbs. dried bread crumbs
- 1 1/4 lb. egg pasta (see related recipe at left)
- 5 Tbs. unsalted butter, clarified (see tip below)
- 12 large fresh sage leaves
- 2 Tbs. kosher salt
- Grated Parmigiano-Reggiano cheese for serving
P.F. Chang's Mongolian Beef

Make the sauce by heating 4 tsp of vegetable oil in a medium saucepan over med/low heat
- 4 teaspoons vegetable oil
- 1 teaspoon ginger, minced
- 2 tablespoons garlic, chopped
- 1 cup soy sauce
- 1 cup water
- 1 1/2 cups dark brown sugar
- 2 to taste vegetable oil, for frying (about 1 cup)
- 2 lbs flank steak
- 1/2 cup cornstarch
- 4 large green onions
Green Bean Casserole

Cook beans in boiling salted water about 10 minutes, until tender but still crisp; drain
- 1-1/2 lb fresh green beans, trimmed or 2 pkgs (10 oz each) frozen beans
- 4 slices bacon
- 1 med onion, chopped
- 4 large fresh tomatoes, peeled and chopped, or 1 can (16 oz) tomatoes, drained and chopped
- 1/4 tsp salt
- Pinch of pepper
- 1/4 cup grated Swiss cheese
- 1/4 cup grated Parmesan cheese
Satiny Chocolate Glaze

- 3/4 cup semisweet chocolate chips
- 3 T butter
- 1 T light corn syrup
- 1/4 teaspoon vanilla extract
Chicken Cacciatore

Pat chicken dry and sprinkle on all sides with 1 1/4 tsp salt and pepper
- 1 (3-1/2 to 4 lb) chicken, cut into 8 serving pieces
- 1 3/4 tsp salt
- 3/4 tsp black pepper
- 2 T olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 4 garlic cloves, chopped
- 1/2 cup dry red wine
- 1 28 oz can whole tomatoes in juice
- 1/2 cup chicken stock
- Accompaniment: cooked white rice or noodles
