INSTRUCTIONS Place the peppercorns and juniper berries on a rimmed baking sheet
- For the cure:
- INGREDIENTS
- 2 tablespoons whole black peppercorns, plus 1 tablespoon for after curing
- 2 tablespoons whole juniper berries
- 1/3 cup kosher salt
- 3 tablespoons packed dark brown sugar
- 2 teaspoons curing salt
- 1/2 teaspoon ground nutmeg
- 3 medium garlic cloves, minced
- 3 fresh or 5 dry bay leaves, torn into small pieces
- 2 teaspoons fresh thyme leaves
- 1 tablespoon fresh rosemary leaves
- For the pancetta: 1 (5-1/2-pound) piece of fresh, skin-on pork belly (1/2 of a whole belly slab)

- 2 1/2 cups sweet potato, shredded and grated (using the larger holes of the grater)
- 2 whole eggs
- 2 teaspoons vanilla extract, the real kind
- 1/2 cup raw honey, melted in the microwave if it’s too thick
- 1/2 cup virgin olive oil
- 1 heaped tablespoon gluten free baking powder
- 1/2 tablespoon baking soda
- 1 cup unsweetened cocoa powder (reduce that amount if you prefer a milder chocolate flavor)
- 2 tablespoons coconut flour
Homemade Italian Dressing Mix:

To make dressing instead of using the dry mix, whisk together 2 T
- 1 T. garlic powder
- 1 T. onion powder
- 1 T. sugar
- 2 T. dried oregano
- 1 t. ground black pepper
- 1/2 t. dried thyme
- 1 t. dried basil
- 1 T. dried parsley
- 1/4 t. celery seeds
- 2 t. salt
- Place all ingredients into a re-sealable container. Mix well to combine. Storein a cool dry place.

Directions Fill a large stockpot with water and bring to a boil
- 8 pounds beef short ribs, cut across the bone
- 2 garlic cloves
- 1 bay leaf
- 1 cup ketchup
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 3 tablespoons honey
- 2 tablespoons oyster sauce
- 1/2 tablespoon chile paste
- 2 teaspoons granulated garlic
- 2 slices lemon
- 2 slices orange
- 4 scallions, chopped
- 1 (2-inch) slice fresh ginger
- 1 red bell pepper, roasted and seeds removed, chopped
- 1 bay leaf
- 2 Camomile tea bags
- 4 tablespoons sesame seeds

- 1 1/4 pounds ground beef, lean
- 1 1/4 pounds ground lamb lean
- 1/4 cup oregano *
- 1 1/2 tablespoons onion powder

- 3/4 tablespoon black pepper ground, or more

- 1 cup yogurt, plain
