Pig-lickin' Good Cake

- For the frosting:
- Solid vegetable shortening to grease pans
- Flour to dust pans
- 1 package Duncan Hines Moist Deluxe Yellow Cake Mix
- 1 (11-ounce) can mandarin orange slices, drained, syrup reserved
- 3 eggs
- 1/3 cup vegetable oil
- 1 (20-ounce) can crushed pineapple, drained
- 12 ounces Cool Whip, or equivalent
- 1 (3-ounce) package instant vanilla pudding mix

- 10 oz frozen whole strawberries (2 cups)
- 3/4 cup whole milk, room temp
- 6 lg eggs, room temp
- 2 tspn vanilla extract
- 2 1/2 c cake flour (9oz)
- 1 3/4 c sugar
- 4 tspn baking powder
- 1 tspn salt
- 12 tbsp unsalted butter, cut into 12pcs and softened
- Frosting
- 10 tbsp unsalted butter, softened
- 2 1/4 c confectioners sugar (9oz)
- 12 oz cream cheese, cut into 12pcs and softened
- Pinch salt
- 8 oz fresh strawberries, hulled and sliced thin (about 1 1/2c)

- 2 pounds lamb lean boneless lamb (use meat cut from the leg or shoulder), cut in 1 inch cubes
- 1/3 cup olive oil
- 1/2 cup lemon juice fresh
- 2 each garlic cloves peeled, cut in quarters
- 1 teaspoon thyme leaves fresh, chopped*
- 1 teaspoon oregano or marjoram, fresh, chopped
- 1 x black pepper freshly ground*
- Yogurt Sauce
- 2 cups yogurt, plain
- 1 each garlic clove peeled and minced
- 1 teaspoon oregano or marjoram, fresh, chopped
- 1 tablespoon lemon juice fresh, for sauce
- 1 teaspoon olive oil
- 1 x salt and black pepper
- 2 large onions spanish, cut in thinly sliced rings
- 24 small romaine lettuce leaves, washed and dried*
- 6 large pita bread rounds *
- 3 each tomatoes ripe

- 1 clove garlic, smashed with a pinch of salt and a little olive oil
- 4 anchovy fillets
- 2 egg yolks
- 1 tablespoon Dijon mustard
- 2 lemons, juiced
- 2 tablespoons water
- 1/2 cup extra-virgin olive oil
- 1/4 cup freshly grated Parmesan, plus extra for garnish Freshly ground black pepper 2 heads romaine lettuce

Directions: Preheat the oven to 400 degrees F
- Ingredients:
- 3 large sweet, firm apples, such as Braeburn, peeled, cored, and cut into 8 pieces
- 12 ounces fresh or frozen pitted cherries, rinsed well
- 2/3 cup roughly chopped walnuts
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 1/2 tablespoons fresh orange juice
- 1 1/2 teaspoons grated orange zest
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon grated nutmeg
- Crumb:
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon grated nutmeg
- 1 cup rolled oats
- 1/2 cup packed light brown sugar
- 6 tablespoons all-purpose flour
- 8 tablespoons unsalted butter, cut into pieces
- 1 unbaked pie crust, for a 9 or 10-inch deep dish baking pan
Bacon Burbon Maple Marmalade

- Ingredients:
- 2 lbs smoked bacon, cut into 1 inch pieces
- 2 medium yellow onions, chopped
- 3 cloves garlic, chopped
- 1/2 cup bourbon (I recommend Old Charter 101)
- 6 tablespoons brown sugar
- 1/2 cup apple cider vinegar
- 1/2 cup maple syrup
- 2 cups freshly brewed coffee
- 6 dashes Tabasco chipotle pepper sauce
- 6 grinds of fresh black pepper
