Paisan's Stuffed Eggplant

Slice the eggplant long ways into 5 slices
- 1 Eggplant
- 1/4 Ground Pork
- 3/4 Ground Beef
- 1 Cup Tomato Sauce (Preferably made the way I make it)
- 1 Cup of Bread Crumbs
- 1 Cup of Flour
- Mozzarella
- 3 Cloves of chopped garlic
- 1/4 minced onion
- Tablespoon of red crushed peppers
- 1 Egg
- Parsley
- Olive Oil
- White Wine
- Salt
Peas and Pasta Salad

- 1 pound cavatappi pasta
- Kosher salt and freshly ground black pepper
- 1/4 cup finely chopped red onion
- 1 (15-ounce) jar salad dressing (recommended: Miracle Whip)
- 1 tablespoon apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 1/2 teaspoons sugar
- 10 ounces frozen peas, thawed
- 1/2 cup shredded sharp Cheddar cheese
- 6 slices bacon, cooked until crisp and crumbled

- 1 to 2 tablespoons vinegar, like cider, balsamic, or red wine
- 2 to 3 teaspoons dried herbs, like thyme, oregano, rosemary, or crumbled bay leaf
- 1 to 2 tablespoons mustard, whole grain or Dijon
- 1 to 2 teaspoon garlic or onion powder, optional
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 4 boneless, skinless chicken breast, each about 6 ounces
Paisan's Ultimate Chili Dogs

Directions Put a skillet over medium heat and drizzle in a 2-count of olive oil
- Extra-virgin olive oil
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1 pound lean ground beef
- 1 medium jar ketchup, about 2 1/2 cups
- 1 teaspoon chili powder
- 2 tablespoons prepared yellow mustard
- Kosher salt and freshly ground black pepper
- 4 all-beef hot dogs (recommended: Ball Park)
- 4 hot dog rolls
- 1/2 cup grated Cheddar
Pasta & Peas Recipe

This recipe makes a great side dish
- 1 pound pipette
- 1 pound peas
- 4 cloves garlic, chopped
- 5 plum tomatoes, boiled, peeled and diced
- 1/2 small sweet onion, diced
- 3 slices bacon, cubed
- Pecorino cheese, shredded for topping
- 3 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
Salmon Baked in Foil

Directions Preheat the oven to 400 degrees F
- 4 (5 ounces each) salmon fillets
- 2 teaspoons olive oil plus 2 tablespoons
- Salt and freshly ground black pepper
- 3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained
- 2 chopped shallots
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme

Fill a large soup pot with cold water and add a handful or so of Kosher salt
- 1 lb spaghetti
- 1/4 cup heavy cream
- 4 eggs
- 1/2 lb bacon, cut into 1/2-inch dice
- 1 tsp extra virgin olive oil
- 2 Tbsp chopped Italian parsley
- Kosher salt and freshly ground black pepper, to taste
- 3/4 cup freshly grated pecorino-romano cheese (parmesan may be substituted)

- 1 POUND LARGE COTTAGE CHEESE
- 1 POUND CHEDDAR CHEESE—half for mixture and half for topping
