Butternut Squash "Noodles" with Winter Pesto

- 1 butternut squash, peeled
- 1 cup almonds, toasted
- 4 cups chopped winter greens: dandelion, kale, chard, etc.
- 2 garlic cloves, peeled

- 1 cup raw cauliflower florets
- 1 cup white whole wheat flour
- 1 teaspoon aluminum-free baking powder
- 1 teaspoon aluminum-free baking soda
- 1/2 teaspoon unrefined sea salt
- 1/2 cup firmly packed dark brown sugar (or date sugar)
- 1/2 cup organic crunchy peanut butter
- 1 whole very ripe banana, mashed
- 1 pastured egg, lightly beaten
Tex-Mex Slow Cooker Chicken

Preparation Layer ingredients in a crock pot in the order given
- 4-5 boneless, skinless chicken breasts
- 2 packets taco seasoning
- 1 can (8 oz) green chilies
- 1 can (15 oz) fire-roasted diced tomatoes, not drained
- 1 can (15 oz) mexicorn or canned corn, drained
- 1 can (15 oz) black beans, rinsed and drained

- 1 (15oz) can chickpeas or white beans, with or without salt
