Almond Pancakes

Heat a cast iron pan or griddle over high heat with a teaspoon or two of coconut oil until it’s melted
- 1 cup almond meal/flour
- 1 cup almond or coconut milk
- 2 tsp baking powder
- Pinch of sea salt
- 1 tbsp flax meal (or if you’re not cleansing, 1 egg)
- 1 tsp cinnamon
Sweet Turkey Chili

Preparation Heat oil in a large, heavy saucepan
- 2 Tbsp vegetable oil
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 2 Tbsp finely chopped green pepper
- 1 lb ground turkey
- 3 Tbsp yellow mustard
- 1 tsp salt
- 2 Tbsp chili powder
- 1 Tbsp cumin
- 1 large can (28 oz) dice tomatoes, not drained
- 1 can (15.5 oz) cannellini beans
- 1 can (16 oz) kidney beans
- optional: grated Parmesan cheese

Cherry Almond Oatmeal

Add ingredients to pre-made cooked soaked oatmeal
- 4 cups cooked soaked oatmeal
- 3 TB butter or coconut oil
- 1/4 cup blanched almonds or soaked/crispy almonds, pulsed in the processor
- 1 cup cherries, pureed
- 1/2 tsp almond extract
- 2-4 TB raw honey (Optional – the cherries and raisins are sweet enough on their own)

Crepes: (Makes 6 crepes) 1/4c mixed berries 1/4c chia gel or 2t chia mixed with 1/4 cup water
- Raspberry Sauce:
- Crepes (Makes 6)
- 2 large ripe bananas
- 1 pear, cored and peeled
- 1/4 c mixed berries
- 1 t ground flax
- 1 t vanilla
- 2 T psyllium husks
- 1/4 c chia gel or 2t chia mixed with 1/4 cup water. Let sit until it turns to gel
- Filling: Vanilla Cream
- 1 1/2 cups cashews (soaked for 2 hours or more) If you have a Vitamix and don't have time to soak, you won't have any problems with smoothness.
- 1/2 cup water
