In skillet cook onion and garlic in hot oil until onion is tender but not brown
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 2 1/4 tsp olive oil
- 1 1/2 cups sliced zucchini
- 2 tsp dried basil, crushed
- 1 baked pastry crust
- 3/4 cup chopped cooked spinach, well drained
- 1/2 tsp nutmeg
- 2/3 cup milk
- 2 eggs, slightly beaten
- 2 egg whites, beaten
- 1 cup shredded mozzarella cheese
- 1 tbsp grated Parmesan cheese
- Tomato slices, optional
