- 1 cup white vinegar
- 8 cups coarsely chopped cored, peeled pears
- 3 red bell peppers, seeded and coarsely chopped
- 3 green bell peppers, seeded and coarsely chopped
- 1 cup granulated sugar
- 2 tbsp salt
- 2 tsp dry mustard
- 1 tsp turmeric
- 1/2 tsp ground allspice
- 1/2 tsp freshly ground black pepper
Gluten-Free Sugar Cookies

These cake-like cookies will be a welcome snack with a cold glass of milk
- 2/3 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1/4 cup unsweetened applesauce
- 4 tsp grated lemon peel
- 1 tsp almond extract
- 1 1/3 cups potato starch
- 1 1/3 cups gluten-free garbanzo and fava flour
- 1 cup tapioca flour
- 1 tsp salt
- 1 tsp xanthan gum
- 1/2 tsp baking soda
- 1/3 cup coarse sugar

Place all ingredients in a blender and mix on medium speed for 1 minute

Amanda's "Steak" Cookies (Oatmeal Raisin-Cranberry)

This is an adapted Oatmeal Raisin cookie recipe that I made up this Christmas
- 6 tbsp unsweetened applesauce (possibly substitute 3 tbsp peanut butter for 3 tbsp applesauce)
- 1 cup raisins
- 1 cup dried cranberries (or whatever choped dried fruit you like)
- 1 tsp vanilla
- 1 cup unsweetened applesauce
- 3/4 cup brown sugar
- 3/4 cup white sugar (or a bit less, depending on the strength of your sweet tooth)
- 1/2 cup wheat germ
- 2 3/4 cups flour
- 1 tsp salt
- 1 tsp cinnamon
- 2 1/4 tsp baking powder
- 2 cups oatmeal
