- 2 2/3 cup light brown sugar
- 1 pound butter or margarine
- 1 1/4 cups chocolate chips

- 1/2 cup finely chopped walnuts
Zucchini Strudel

Place grated zucchini n a colander and press firmly to remove as much moisture as possible
- 3 medium sized zucchini (1 1/4), grated
- 3/4 cup lightly salted butter
- 1 cup onions, minced
- 8 oz container creamed cottage cheese
- 8 oz pkg cream cheese, diced
- 1/4 cup grated Parmesan cheese
- 3 large eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/8 tsp ground nutmeg
- 2 tbsp dill weed, optional
- Fresh soft bread crumbs
- 8 oz pkg phyllo dough
Buttery Roasted Pumpkin Seeds

- 1 1/2 cups pumpkin seeds from fresh pumpkin, washed and patted dry.
- 2 tablespoons butter, melted (don’t use margarine)

Rhubarb Bread Pudding

Mix eggs, sugar, cinnamon and butter together
- 3 eggs, beaten
- 1 1/2 cups sugar
- 1 tsp cinnamon
- 3 tbsp butter
- 2 cups diced bread, any kind
- 3 cups diced rhubarb
- 3 cups milk
Chocolate-Orange "Mousse" with Raspberries

Combine almond milk, chocolate, and cocoa in small saucepan
- 1 cup chocolate almond milk
- 5 oz bittersweet chocolate, chopped
- 2 tbsp unsweetened cocoa powder (we used Ghirardelli)
- 1 tbsp grated orange zest plus additional for garnish
- 1 cup thawed frozen whipped topping (we used Truwhip)
- Fresh mint (for garnish)
- 1 1/2 cups fresh raspberries
