  • 2 packages rapid rise yeast
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 large egg
  • 1/3 cup extra-virgin olive oil
  • 1/2 cup finely chopped fresh parsley
  • 1 cup finely chopped fresh basil
  • 4 cloves garlic, minced
  • 1 cup ground walnuts
  • 1 cup grated Parmesan cheese
  • 1 1/3 cups hot water
  • Additional 1 1/2 cups bread flour for adjusting the dough
  • Cornmeal for dusting the sheet pan
  • Glaze:
  • 1 large egg
  • 1 tbsp water

  • 1 teaspoon olive oil
  • 1 medium red onion, diced (1 cup)
  • 1 teaspoon minced garlic
  • 1 stalk celery, diced (1/2 cup)
  • 1 small green pepper, diced (1/2 cup)
  • 2 carrots, diced (1/2 cup)
  • 1 1/2 cups red kidney beans, rinsed and drained
  • 2 cups canned crushed tomatoes
  • 1/2 cup hominy or frozen corn
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • Salt
  • Freshly ground black pepper
  • 2 slices crusty whole grain bread
  • Garnish:
  • 2 tablespoons reduced-fat sour cream
  • 2 tablespoons diced red onion
  • 1/2 cup chopped fresh cilantro
