  • 4 to 5 tbsp ice water
  • Filling:
  • 7 medium Granny Smith apples, peeled, cored, sliced 1/4-inch thick
  • 1/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1/2 to 1 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg, optional
  • 1/4 tsp salt
  • 2 tbsp unsalted butter
  • 1 tbsp plus 1 tsp cornstarch
