Lime-Coconut Kisses

Preheat oven to 325 F. In bowl, beat sugar and butter until fluffy; add egg, zest, lime juice and vanilla
- 2 cups confectioners' sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1 tsp grated lime zest
- 1 tbsp fresh lime juice
- 1 tsp vanilla extract
- 3 1/4 cups shredded sweetened coconut
- 2 cups unsifted all purpose flour
- Food coloring, optional
Apricot Sweet-and-Sour Sauce
