Lentil Soup (Moosewood)

"Before all the snow melts and spring sets in, I thought I'd clear the decks on a soup request
- 3 cups dry lentils
- 7 cups water
- 2 tsp salt
- 6 to 8 medium cloves garlic, crushed
- 2 cups chopped onion
- 2 stalks celery, chopped
- 2 medium carrots, sliced or diced
- 1/2 to 1 tsp basil (optional)
- 1/2 tsp thyme (optional)
- 1/2 tsp oregano (optional)
- Lots of freshly ground black pepper
- 2 to 3 medium-sized ripe tomatoes
- Red wine vinegar, to drizzle on top

For crust, combine flour and powdered sugar; cut in butter until mixture is crumbly
- Crust:
- 1 cup flour
- 1/3 cup powdered sugar
- 6 tbsp butter or margarine
- Filling:
- 1/4 cup flour
- 1 1/4 cups sugar
- 1/2 tsp salt
- 2 eggs, slightly beaten
- 3 cups diced fresh rhubarb
- Topping:
- 3/4 cup flour
- 1/2 cup sugar
- 1/2 tsp cinnamon
- 1/3 cup butter or margarine
Vegetable Medley Quiche

Melt margarine in large frying pan over medium heat
- 1 tbsp margarine
- 1 cup fresh mushrooms, sliced
- 1 cup zucchini, sliced
- 1/3 cup green onions, sliced
- 1/3 cup green pepper, chopped

- 1 cup Cheddar cheese, shredded
- Pastry for 10-inch pie
- 4 large eggs, beaten

Ginger-Plum Crumble with Ricotta Crème

- Juice of 1 lemon
