Green Tomato Pie

Preheat oven to 400 F. Bake pie shell for 5 minutes; set aside
- 1 (9-inch) unbaked pie shell
- 3 tbsp salad oil
- 2 medium onions, sliced
- 2 garlic cloves, sliced
- 8 cups sliced green tomatoes (about 4 large or 3 pounds)
- 3 tbsp chopped parsley
- 2 tbsp flour
- 2 tsp salt
- 1/4 tsp pepper
- 1 cup shredded Cheddar cheese (about 4 ounces)
Lemon Cloud Pie

Heat oven to 450 F. Prepare pie crust as directed on package for one-crust baked shell using 9-inch glass pie pan
- Filling:
- 1 refrigerated pie crust (from 15 ounce package, softened as directed on package)
- 1 cup sugar
- 3 tbsp cornstarch
- 1 cup water
- 1/3 cup lemon juice
- 2 egg yolks, slightly beaten
- 4 ounces cream cheese, cubed and softened
- 1 tsp grated lemon peel
- 1/2 cup whipping cream
- Topping:
- 1/2 cup whipping cream, whipped

Cranberry Walnut Apple Cake

Preheat oven to 350 F. Cream together the butter, eggs, and sugar in a large mixing bowl
- 1/2 cup butter or margarine
- 2 eggs
- 1 cup sugar
- 1 1/2 cups unsweetened applesauce
- 1 tsp vanilla
- 1 cup unbleached flour
- 1 cup whole wheat flour
- 2 tbsp cocoa

- 1 tsp cinnamon

- 1/4 tsp cloves
- 1 cup dried cranberries
