- 2 cups powdered milk
- A dash of salt
- 1/4 cup cocoa
- 1 cup of powdered (confectioners') sugar
Low-Fat Apple Waldorf Salad

Mix mayonnaise and yogurt in a bowl until blended
- 1/3 cup low-fat mayonnaise
- 1/3 cup fat-free yogurt
- 2 medium Fuji apples, cored and cut into bite-sized chunks
- 1/2 fresh pineapple, peeled and cut into bite-sized chunks, or one (20 ounce) can pineapple chunks, packed in juice, drained
- 2 celery stalks, sliced (7- to 8-inch stalks)
- 3/4 cup coarsely chopped walnuts, toasted
- 1/3 cup golden raisins
Berry-Mandarin Topped Salad

This recipe was tested in an 850 watt microwave
- 1/4 cup sugar
- 2 tbsp cider vinegar
- 2 tbsp honey
- 1 1/4 tsp lemon juice
- 1/2 tsp paprika
- 1/2 tsp ground mustard
- 1/2 tsp grated onion
- 1/4 tsp celery seed
- Dash salt
- 1/3 cup vegetable oil
- 8 cups torn mixed salad greens
- 2 cups sliced fresh strawberries
- 1 (11 ounce) can mandarin oranges, drained
- 1 medium sweet onion, sliced and separated into rings
- 1/3 cup slivered almonds, toasted
- 4 veggie bacon strips, cooked and crumbled

Chestnut Brownies

Preheat oven to 350 F. Grease a 9-by-13-inch pan
- 4 ounces unsweetened chocolate
- 8 ounces sweet, unsalted butter (2 sticks)
- 4 eggs
- 2 cups granulated sugar
- 2/3 cup sifted chestnut flour (available at Cassano’s)
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2/3 cup coarsely chopped roasted chestnuts

- 2 1/2 cups whole wheat flour or 3 cups flour
