Hash Brown-Crusted Halibut with Mango Mint Relish

Sprinkle both sides of the halibut with the salt, pepper and granulated garlic
- 4 skinless halibut fillets, 3 to 4 ounces each, about 1/2 inch thick
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/8 teaspoon granulated garlic
- 2 cups refrigerated shredded hash browns, such as Simply Potatoes
- 1 large egg, whisked in a shallow dish
- 2 tablespoons butter, melted and cooled slightly
- 1 tablespoon vegetable oil
- Mango-Mint Relish, recipe follows
- 2 tablespoons thinly sliced fresh mint
- Zest and juice of 2 limes
- 1 ripe medium mango, diced
- 1 Fresno chile, half of the seeds and ribs removed, diced
- 1 small shallot, minced
- Kosher salt and freshly ground black pepper
Pumpkin Spice Crumble with Pear and Cranberry

Preheat the oven to 375 degrees F
- 1 stick (8 tablespoons) cold butter, cut into small pieces
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/4 cup pecans, chopped
- 1/4 cup rolled oats
- 3/4 cup all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon kosher salt
- 4 ripe pears, cored and diced
- 1 pound fresh or frozen cranberries
- 2 tablespoons cornstarch
- 2 tablespoons granulated sugar
- 1 teaspoon ground ginger
- 1 teaspoon orange zest
- Pinch kosher salt
- Butter or nonstick cooking spray, for the baking dish
- Pumpkin Spiced Whipped Cream, recipe follows, vanilla ice cream, Greek yogurt or coffee ice cream, for serving
- 1 cup heavy whipping cream, chilled
- 1/4 cup confectioners' sugar
- 1 teaspoon pumpkin spice
- 1 teaspoon vanilla extract or bourbon
Ceviche

Put the fish, scallops and shrimp in plastic bowl and cover with lime juice and refrigerate for 4 hours
- 1 piece of mild white fish cut in small pieces
- 1/4 pound of bay scallops cut in half
- 3/4 pound of shrimp cut up in small pieces
- chopped and seeded cucumber
- chopped and seeded tomato
- chopped onion
- jalapeno pepper, seeded and chopped into small pieces
- red bell pepper chopped
- cilantro
- avocado, chopped
- crab meat - optional
Mini Zucchini Cheese Bites

Preheat oven to 400 degrees
- ◾2 cups grated zucchini ( about 1 medium)
- ◾1 egg
- ◾1/2 cup grated Parmesan Cheese

- 8 cups vegetable broth
- One 6-ounce can tomato paste
- One 10-ounce package frozen mixed vegetables

Potato Skins with Beer Cheese

- 6 small russet potatoes (about 2 pounds), scrubbed and pricked all over with a fork
- 1 tablespoon vegetable or olive oil
- Kosher salt and freshly ground black pepper
