Cajun Queso

Melt butter on low in large saucepan ad cook without allowing the butter to brown
- 4 T unsalted butter
- 3 T all purpose flour
- 1/4 cup white wine
- 2 cups whole milk
- 1 t hot sauce
- 1 t kosher salt
- 1/4 t white pepper
- 1/4 t saffron
- 1 cup grated Gruyere
- 1 pound crabmeat, crawfish or cooked shrimp
Easy Mac and Cheese Muffins

Preheat the oven to 350 degrees F (175 degrees C)
- 2 cups uncooked elbow macaroni
- 1 tablespoon butter
- 1 egg, beaten
- 1 cup milk
- 1 1/2 cups shredded sharp Cheddar cheese
- 1 1/2 cups shredded ilalian or colby jack cheese
- 1 /2 cup seasoned dry bread crumbs
- 2 teaspoons olive oil
- 1 /2 teaspoon salt
Smoked Salmon Spread

Preheat oven to 400 degrees
- 2 baked potatoes
- 8 ounces chopped smoked salmon
- 1/2 cup chopped fresh parsley
- 2 T capers
- 1/2 t worcestershire sauce
- 2 T lemon juice
- 1/2 cup heavy whipping cream
- 1/2 cup panko crumbs
Red, White, and Blue Berry Trifle

In a medium bowl, combine raspberries with 1/4 cup confectioners' sugar and orange juice
- 1 1/2 pounds raspberries (5 cups)
- 3/4 cup confectioners' sugar
- 1/4 cup fresh orange juice (from 1 large orange)
- 10 ounces mascarpone cheese (1 1/3 cups)
- 1 1/4 cups cold heavy cream
- 1/2 teaspoon pure vanilla extract
- Fine salt
- 20 to 24 ladyfingers (from a 7-ounce package), broken into 1-inch pieces
- 3/4 pound blueberries (2 1/2 cups)
Cast Iron Pizza

Place a 12-inch cast-iron skillet in the oven and preheat to 500 degrees F
- 1 pound frozen store-bought pizza dough, thawed and risen
- 1/4 cup olive oil
- 1/2 cup store-bought pizza sauce
- mozzerella cheese
- 1/4 cup torn fresh basil
Mediterranean Shrimp

Preheat the oven to 450 degrees F
- 3 tablespoons dry white wine
- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic, minced
- 12 ounces jarred artichoke hearts, drained
- 8 ounces haricot vert, trimmed and cut in half
- 1 pint grape tomatoes
- 1/3 cup kalamata olives, pitted and coarsely chopped
- 2 tablespoons capers, drained and coarsely chopped
- 1 red onion, cut into chunks
- Kosher salt and freshly ground black pepper
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper
- 1 clove garlic, minced
- Grated zest and juice of 1 lemon
- 1 pound cleaned large shrimp
- Kosher salt and freshly ground black pepper
- 1 baguette, cut in half lengthwise and then crosswise into 4 pieces total
- Extra-virgin olive oil, for drizzling
- 4 ounces crumbled feta cheese
