Pineapple, Mango and Strawberry Salsa

Fruit Salsa:
- 3/4 cup small diced pineapple
- 3/4 cup small diced mango
- 1/2 cup small diced strawberries
- 1/4 cup small diced red onion
- 1 jalapeno, stemmed, seeded and finely chopped
- 2 tablespoons chopped fresh mint leaves
- 2 tablespoons freshly squeezed orange juice
- 1 tablespoon freshly squeezed lime juice
- 1/4 teaspoon salt

Tomato Jam

Tomato Jam: On the base of each tomato, slice an X with a paring knife, piercing the skin
- 10 vine ripe tomatoes, chopped
- 1 cup brown sugar
- 1/2 cup sherry vinegar
- 1/4 cup soy sauce
- 1/2 tablespoon togarashi (Japanese chili powder)
Grilled Artichokes

- 1/3 cup extra-virgin olive oil

- 6 medium beets, cooked and quartered
- 6 cups fresh arugula
- 1/2 cup walnuts, toasted, coarsely chopped
- 1/4 cup dried cranberries or dried cherries
- 1/2 avocado, peeled, pitted, and cubed
- 3 ounces soft fresh goat cheese, coarsely crumbled
Sharsh's White Bean Chicken Chili

Roast the poblano peppers on a grill or under the broiler turning often, until blackened and soft
- 8 to 9 poblano peppers, roasted, peeled and chopped
- 3 medium onions
- 1 yellow bell pepper
- 3 tablespoons olive oil
- 2 cloves garlic, pressed
- 1 teaspoon chili powder
- 1 teaspoon ancho chili powder
- 5 boneless, skinless chicken breasts, diced
- 12 to 15 tomatillos, washed, paper-like skins removed
- 1 quart chicken broth
- Jalapeno or serrano peppers if needed for spice (poblanos will vary in their heat)
