Chicken Piccata

- 2 skinless and boneless chicken breasts, butterflied and then cut in half
- Sea salt and freshly ground black pepper
- All-purpose flour, for dredging
- 6 tablespoons unsalted butter
- 5 tablespoons extra-virgin olive oil
- 1/3 cup fresh lemon juice
- 1/2 cup chicken stock
- 1/4 cup brined capers, rinsed
- 1/3 cup fresh parsley, chopped
Shrimp and Egg Fried Rice with Napa Cabbage

Heat 2 tablespoons of the peanut oil in a wok or a large nonstick skillet over medium-high flame
- 6 tablespoons peanut oil
- 2 shallots, thinly sliced
- 1 (2-inch) piece ginger, peeled and grated
- 1/2 small head napa cabbage, core removed and finely sliced
- Salt
- 2 cloves garlic, minced
- 1/2 pound medium shrimp, peeled and deveined
- 3 large eggs, lightly beaten
- 4 cups cooked long-grain white rice
- 1/2 cup frozen peas, thawed in warm water
- 3 tablespoons soy sauce
- 1/4 bunch scallions, sliced, for garnish

Pepperoni Pizza Dip

Preheat the oven to 350 degrees F
- Pizza Sauce:
- 1 tablespoon olive oil
- 1/4 cup finely chopped onion
- 1 tablespoon minced garlic
- 1/4 teaspoon red chile flakes
- 1 (28-ounce) can crushed tomatoes (recommended: fire roasted Muir Glen)
- 1 tablespoon julienned fresh basil leaves, plus sprig for garnish
- 1 teaspoon dried marjoram
- 1 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- Bottom Layer:
- 8 ounces cream cheese, softened

- 1 egg, slightly beaten
- 1/2 teaspoon minced garlic
