Healthy Apple Crisp | Snack Girl

Heat oven to 350 F. Peel and core the apple and chop into 1/4 inch squares
- 1 medium apple
- 1 tablespoon brown sugar
- 1 tablespoon oats
- 1/2 teaspoon cinnamon
Feta Bruschetta

In a small bowl, combine butter and oil; brush onto both sides of bread
- 2 tbs butter, melted
- 2 tbs olive oil
- 10 slices French bread (1 inch thick)
- 1 large tomato, seeded and chopped
- 1 4oz pkg crumbled feta cheese
- 2 garlic cloves, minced
- 1 tbs minced fresh basil
- Salt & pepper to taste
Lazy Cabbage Roll Casserole

PLACE cabbage leaves in large bowl
- 5 large savoy cabbage leaves
- 1 lb. lean ground beef
- 1 onion, chopped
- 1 parsnip, shredded
- 1 carrot, shredded
- 1 stalk celery, thinly sliced
- 1 Tbsp. tomato paste
- 1 cup instant white rice, uncooked
- 1/4 cup KRAFT Tuscan House Italian Dressing and Marinade
- 1 qt. (4 cups) tomato sauce, divided
- 1 cup KRAFT Shredded Three Cheese with a Touch of PHILADELPHIA, divided

Thumbprint Cookies

Preheat oven to 350 degrees
- Icing:
- 1/4 c. shortening
- 1/4 c. butter, room temperature
- 1/4 c. brown sugar
- 1 egg, separated
- 1/2 tsp vanilla
- 1 c. all-purpose flour
- 1/4 tsp salt
- 3/4 c. pecans, finely chopped
- 1/2 tbs butter, melted
- 1 c. powdered sugar
- 1-2 tbs milk
Beef and Bulgur-Stuffed Zucchini

Preheat oven to 375 degrees F
- 6 med zucchini (about 1/2 pound each)
- 1 tbs olive oil
- 1 sm chopped onion
- 1 tbs chopped garlic
- 1/2 lb ground beef
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 14.5 oz can diced tomatoes, strained and juice reserved (about 3/4-1 c. juice)
- 1 c. cooked bulgur (1/3 cup uncooked)
- 3 tbs raisins
- 3 tbs pine nuts, toasted in a dry skillet over a med- high flame for 2 minutes
- 1/4 c. chopped parsley leaves
- 1/2 c. low-sodium tomato sauce
- 1/2 tsp salt
Spinach and Potato Frittata

Preheat oven to 450 degrees F
- 3 tablespoons canola oil, divided
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1 russet potato, thinly sliced
- 1/2 medium yellow onion, diced
- 2 teaspoons chopped garlic
- 1 (10-ounce) box frozen chopped spinach, thawed and water squeezed out
- 4 eggs
- 1 cup milk
- 1/2 cup shredded mozzarella cheese
- Nonstick cooking spray
- Directions
Broccoli Cole Slaw

Mix salad dressing ingredients in a bowl and add the slaw
- 1 bag broccoli cole slaw mix
- 1 c. lowfat mayo
- 1/4 c. sugar or sugar substute
- 1 tbs vinegar
- 1 tbs lemon juice
- 1 tsp celery seed
- 1 tsp poppy seeds
- dash of pepper

- 8 c. mixed greens
- 1 c. sprouts
- 2 tbs finely chopped chives
- Salt and pepper
- 2-3 tbs olive oil
- 1/2 lemon, juiced
Montreal Steak Seasoned Mashed Potatoes

Place the potatoes into a large pot and cover with salted water
- 3 pounds red potatoes, cut into chunks
- 1/4 cup butter
- 2 ounces cream cheese, cut into pieces
- 1/4 cup milk
- 2 tablespoons bacon bits
- 1/2 cup shredded Colby-Monterey Jack cheese
- 2 tablespoons Montreal steak seasoning
- 1/2 teaspoon kosher salt, or to taste
