Pinto Beans and Rice

1.Heat beans in medium saucepan over medium heat for 3 to 5 minutes, or until hot
- 1/2 cup canned pinto beans, with liquid
- 1 cup cooked brown rice, heated
- 1 tsp. extra-virgin olive oil
- 1 tsp. ground smoked paprika
- 1 dash ground cumin
- 1/4 tsp. ground coriander
- 1 tsp. Bragg Liquid Aminos
- Himalayan salt (to taste; optional)
Asian Cabbage Salad

1.Combine vinegar, lime juice, oil, ginger, and Bragg Liquid Aminos in a small bowl; mix well
- 3 Tbsp. rice vinegar
- 2 Tbsp. fresh lime juice
- 2 Tbsp. sesame oil
- 1 1/2 tsp. finely chopped fresh ginger root
- 2 Tbsp. Bragg Liquid Aminos
- 1/2 head Napa cabbage, shredded (4 cups)
- 1/2 medium carrot, shredded
- 1/4 medium red onion, thinly sliced
- 2 green onions, thinly sliced
- Himalayan salt (to taste; optional)
Chichen Enchiladas

Cook chicken in a dutch oven with water, and bring it to boil
- 4 chicken breasts
- 1 cup chopped onion
- 1 clove galic, minced
- 2 TBS olive oil
- 2 16 oz can of tomatoes
- 1 15 oz can of tomato sauce
- 2 4 oz can chopped green chiles
- 1 tsp sugar
- 1 tsp cumin
- 1/2 tsp whole oregano
- 1/2 tsp whole basil
- 3/4 cup of sour cream
- 8 oz shredded cheese
- 12 flour tortillas
3 Day Refridgerator Rolls

Dissolve yeast in warm water, let stand 5 min
- 1 package dry yeast
- 2 T. warm water (105-115)
- 2 cups milk
- 1/2 cup sugar
- 1/2 cup shortening
- 5 to 5 1/2 cup flour
- 1/2 t. of salt
Southwestern Veggie Taco

1.Combine mashed avocado and fresh salsa in small bowl; mix well, Set aside
- 1/4 medium avocado, mashed
- 2 Tbsp. fresh salsa
- 1 1/4 cup Black Beans and Rice
- 1/4 cup cooked corn kernels
- 1 (6-inch) corn tortilla
Sausage Dressing

Cook sausage, onion, and celery in skillet over med
- 1 lb. pork sausage
- 1 onion chopped
- 4 stalks celery diced
- 4 cups cornbread crumbs
- 4 cups white bread crumbs
- 2 t. sage
- 1/4 t. pepper
- 3 1/2 chicken broth
- 2 eggs, beaten
Lasagna

1. put the water on to boil to cook the noodles for the package directions
- 2 Lb of hamburger meat
- 1 Package of lasagna noodles
- 2 24 oz. jars of Classico Traditional Tomato & Basil Pasta Sauce
- 2 eggs
- 1 24 oz. low fat Small Curd Cottage Cheese
- 1 16 oz. package Kroger Finely Shredded Mozzarella Cheese
- 1 6 oz.Kraft Finely Shredded Parmesan Cheese (you will not use all of it)
- 1 T. onion flakes or 1/4 of a fresh onion chopped
- 1 t. italian seasonings
- 1 t. of garlic powder
- salt and peper to taste
- Pan- use a 9 x 13 pan with the sides being 3-4 tall, so it doesnt spill over.
Pumpkin Pie

Roll pastry out and place in 9" pieplate
- Pastry for 9" pie shell
- 3 eggs
- 1 can of pumpkin
- 1/2 cup brown surgar
- 1 cup half and half
- 1/4 t. salt
- 1 t. cinnamon
- 1/2 t. mace
- 1 t. groung cloves
- 1 t. ground ginger
- 1 t. allspice
- 1/2 t. nutmag
Sugar- Frosted Apple Pie

Peel core and thinly slice apples; sprinkle with lemon juice
- 8 Granny Smith apples
- 2 t. lemon juice
- 4 T. flour
- 1/4 t. salt
- sugar
- ground cinnamon
- 1 T. butter

Hershey's "Especially Dark" Chocolate Cake

1. Heat oven to 350, and grease and flour 2 9 inch pans 2
- 2 cups sugar
- 1 3/4 cup flour
- 3/4 cup Hershey's Special Dark cocoa
- 1 1/2 t. baking powder
- 1 1/2 t. baking soda
- 1 t. salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 t. vanilla
- 1 cup boiling water
- Frosting
- 1 stick butter
- 2/3 cup Hershey's Special Dark cocoa
- 3 cups powdered sugar
- 1/3 cup milk
- 1 t. vanilla
