- 3 C quick oats

- 1 t salt
- 1 t cinnamon

Easy Shepherd's Pie

Heat Oven to 375 degrees. Brown meat in large skillet; drain
- 1 lb ground beef
- 2 C hot mashed potatoes (1 pkg instant boxed)
- 4 oz cream cheese
- 1 C shredded cheese
- 2 cloves garlic, or minced dried garlic
- 4 C frozen mixed vegetables
- 1 C beef gravy
Cream Cheese Rhubarb Pie

- 1/4 C cornstarch
- 1 C sugar
- pinch salt
- 1/2 C water
- 3 C sliced rhubarb
- 1 unbaked pie shell
- 8 oz cream cheese, softened

- 1/2 C sugar
- Garnish:
- whipped cream/cool whip
- sliced almonds
Pork Chop and Biscuit Casserole

Brown pork chops in a skillet
- Ingredients
- 4-6 boneless pork chops
- 1 can refrigerator biscuits
- 1 can cream of chicken soup (undiluted)
- 1 cup chopped celery
- 1 cup chopped onions
- 1 egg
- 1/4 tsp pepper
- 1/8 tsp poultry seasoning (or sage/thyme)

- 9 lasagna noodles, cooked
- 1 (10 ounce) package frozen chopped spinach, thawed and completely drained
- 1 (15 ounce) container fat free ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 teaspoon minced garlic
- 1/2 teaspoon dried Italian seasonings
- salt and fresh pepper
- (optional) 1 chicken breast, cooked and diced
- 32 oz tomato sauce (I used spaghetti sauce)
- 9 Tablespoons part skim mozzarella cheese, shredded

- 1 onion, peeled and halved
- 2 cups dry pinto beans, rinsed
- 1/2 fresh jalapeno or other hot pepper, seeded and chopped
- 2 cloves garlic, minced
- 3/4 teaspoons salt
- 1/2 teaspoon black pepper
- One big pinch of cumin
- 6 cups water
- Ingredients
- 1 onion, peeled and halved
- 2 cups dry pinto beans, rinsed
- 1/2 fresh jalapeno or other hot pepper, seeded and chopped
- 2 cloves garlic, minced
- 3/4 teaspoons salt
- 1/2 teaspoon black pepper
- One big pinch of cumin
- 6 cups water
- Instructions
- 1 .Combine all ingredients in slow cooker.
- 2 .Cook on high for 8 hours or overnight while you are sleeping.
- 3 .Remove the bigger onion chunks and drain the excess liquid. If desired, save excess liquid until the final product is desired consistency.
- 4 .Mash remaining beans with a potato masher and voila! You have homemade refried beans

- 3 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 3/4 cup low-sodium chicken broth
- 3 sprigs fresh thyme or 3/4 tsp dried thyme leaves
- 1/2 cup heavy cream
- 1/2 cup shredded Asiago cheese
- Parmesan cheese for sprinkling
