Crab Tomato Soup

This recipe shows the French influence on Vietnamese cuisine
- Rice vermicelli:
- 1/2 cup dry shrimp, or 1/2 cup chopped, peeled, cooked shrimp
- 2 cups beef broth, reduced sodium, reduced fat
- 2 cups chicken broth, reduced sodium, reduced fat
- 1 tbsp fish sauce
- 2 ripe medium tomatoes, diced
- 1 egg
- 1/2 lb fresh backfin or lump crabmeat, OR 1/2 lb imitation crabmeat
- 1/3 cup ground pork
- 1 tsp oil
- 1/2 medium onion, sliced
- 8 cups water
- 1 lb package dry, rice vermicelli
- Fish sauce, to taste
- Ground red chile pepper, to taste
Garden Salad

Serve this with Crab Tomato Soup
- 10 cilantro sprigs
- 10 mint sprigs
- 10 basil sprigs
- 1/2 head lettuce, shredded
- 1 cup bean sprouts
- 1 lime, quartered
Colorful Corn Chowder

A yummy, healthy, thick chowder
- 1 tablespoon butter
- 1/2 large onion, chopped
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 1 carrots, chopped
- 1 (10 ounce) package frozen corn kernels, thawed
- 3/4 cup dry potato flakes
- 1 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon ground cayenne pepper
- 1-1/2 cups water
- 1 cup milk
- 1/2 cup half-and-half
- 1/4 cup shredded Cheddar cheese
Salmon with Tomato, dill, and Garlic soup (Canh Rieu Ca)

A rich seafood soup. One of my favorite soups
- 1 lb salmon fillet, with or without skin
- 1 tbsp plus 1/2 tsp canola or other neutral oil
- 1 small yellow onion, sliced thinly
- 1 1/2 lbs tomatoes, cored and coarsely chopped
- 3/4 tsp salt
- 1 tbsp fish sauce
- 6 cups chicken broth, reduced sodium and fat
- 3 tbsp chopped fresh dill, feathery tops only; or 1 1/2 tbsp dried dill
- 2 cloves garlic, finely minced
- Black pepper
- Additional salt to taste
Cabbage and Egg Stir Fry

A quick veggie side dish.
- 2 tbsp canola oil
- 2 cloves garlic, minced
- 1 package cole slaw mix, about 4cups total
- 1-2 tbsp water
- 2 tsp fish sauce
- 2 eggs, beaten
- Black pepper
Blueberry-Applesauce Muffins

These good-for-you muffins taste outstanding
- 1 3/4 cups unbleached all-purpose flour
- 3/4 cup light brown sugar
- 1/2 cup whole wheat flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp grated nutmeg
- 1 tsp ground cinnamon
- 1 1/4 cups low-fat buttermilk
- 1 1/2 cups unsweetened applesauce
- 1 egg
- 1 tsp vegetable oil
- 1 1/2 cups of fresh blueberries (You can also substitute mashed ripe bananas.)
Peanut Butter, Mayonnaise, and Lettuce Sandwich

- 2 slices bread
- 1 tablespoon mayonnaise
- 2 tablespoons peanut butter
- 2 lettuce leaves
Unbelievable Chicken

I don’t own a grill (yet) so I make this on the stove top over med-high heat
- 1/4 cup cider vinegar
- 3 tablespoons prepared coarse-ground mustard
- 3 cloves garlic, peeled and minced
- 1 lime, juiced
- 1/2 lemon, juiced
- 1/2 cup brown sugar
- 1 1/2 teaspoons salt
- ground black pepper to taste
- 6 tablespoons olive oil
- 6 skinless, boneless chicken breast halves
Fusion Chicken

Can also be called awesome chicken! Prep Time: 15 Minutes Cook Time: 12 Minutes Ready In: 27 Minutes Yields:
- 2 tablespoons olive oil
- 4 skinless, boneless chicken breast halves - cut into strips
- 1 tablespoon red wine vinegar
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- 1/8 teaspoon ground nutmeg
- 1/4 cup chopped fresh cilantro
- 1 small onion, chopped
- 2 apples - peeled, cored and chopped
- 1/4 cup mild green tomatillo salsa
My Favorite Cheesecake

I had this delicious cheesecake at a wine tasting party hosted by my friend, Nora
- Crust:
- 3/4 cup of ground pecans
- 3/4 cup of graham cracker crumbs
- 3 Tablespoons of melted Butter
- Cheesecake:
- 3 8 oz packages of cream cheese at room temperature
- 3 eggs room temperature
- 1 1/8 cup sugar
- 1 1/2 teaspoons vanilla
- 1 1/2 teaspoons almond extract
- Squirt of lemon juice
- Topping:
- 1 pint of sour cream
- 2 tablespoons of suagr
- 1 teaspoon of vanila
