  • Rice vermicelli:
  • 1/2 cup dry shrimp, or 1/2 cup chopped, peeled, cooked shrimp
  • 2 cups beef broth, reduced sodium, reduced fat
  • 2 cups chicken broth, reduced sodium, reduced fat
  • 1 tbsp fish sauce
  • 2 ripe medium tomatoes, diced
  • 1 egg
  • 1/2 lb fresh backfin or lump crabmeat, OR 1/2 lb imitation crabmeat
  • 1/3 cup ground pork
  • 1 tsp oil
  • 1/2 medium onion, sliced
  • 8 cups water
  • 1 lb package dry, rice vermicelli
  • Fish sauce, to taste
  • Ground red chile pepper, to taste

A rich seafood soup. One of my favorite soups

  • 1 lb salmon fillet, with or without skin
  • 1 tbsp plus 1/2 tsp canola or other neutral oil
  • 1 small yellow onion, sliced thinly
  • 1 1/2 lbs tomatoes, cored and coarsely chopped
  • 3/4 tsp salt
  • 1 tbsp fish sauce
  • 6 cups chicken broth, reduced sodium and fat
  • 3 tbsp chopped fresh dill, feathery tops only; or 1 1/2 tbsp dried dill
  • 2 cloves garlic, finely minced
  • Black pepper
  • Additional salt to taste

  • Crust:
  • 3/4 cup of ground pecans
  • 3/4 cup of graham cracker crumbs
  • 3 Tablespoons of melted Butter
  • Cheesecake:
  • 3 8 oz packages of cream cheese at room temperature
  • 3 eggs room temperature
  • 1 1/8 cup sugar
  • 1 1/2 teaspoons vanilla
  • 1 1/2 teaspoons almond extract
  • Squirt of lemon juice
  • Topping:
  • 1 pint of sour cream
  • 2 tablespoons of suagr
  • 1 teaspoon of vanila
