Pan-Fried Catfish

This is one of my all-time favorite recipes
- 1 (2) egg whites
- 1 (2) Catfish fillets, 5oz each
- 1 (2) tbsp cornmeal
- Salt and pepper, to taste
- 2 (4) tbsp olive or canola oil
- 2 (4) lemon wedges
Vinegar Salad Dressing

Serve this dressing with any salad, but it is included here to go with the Vietnamese Chicken salad/coleslaw
- 1/4 cup white vinegar
- 1/4 cup rice wine vinegar
- 1 tsp olive oil
- 1/4 cup water
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 1/2 tbsp sugar or Splenda
- 2 garlic cloves, finely minced
- 1 small onion, red or white, thinly sliced
Vietnamese Chicken Salad

A delightfully fresh and filling “coleslaw” with a vinaigrette dressing
- 1 rotisserie cooked chicken, with the meat pulled from the bones and shredded into bite-sized pieces
- 1 package of cole-slaw mix, or 1/2 head small, white cabbage, shredded
- 2 carrots, shredded
- 1 tsp salt
- 5 mint or cilantro springs, minced
- 1/2 tsp chile pepper sauce or hot sauce, such as Tobasco, optional
- 1/4 cup roasted sesame seeds or crushed peanuts, optional
- 1/2 cup Vinegar Salad dressing
- 1 cup Sweet and Sour Fish Sauce
Sauteed Pork Chops with Basil and Balsamic Vinegar

- 1/2 cup balsamic vinegar
- 1 tbsp rice wine vinegar
- 2 tsp cornstarch
- 1 tbsp minced fresh ginger, or ground ginger
- 2 tsp fish sauce
- 3 tbsp packed light brown sugar
- 1/2 cup cold water
- 2 tbsp vegetable oil
- 4 boneless pork chops, about 1 lb total
- Salt and ground black pepper
- 1/4 cup chopped fresh basil leaves
- 4 scallions, thinly sliced
Apple-Prune Squares

A dessert that tastes good and is guilt-free
- 1 large egg
- 3/4 cup packed brown sugar
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- 1/2 cup chopped pitted, orange-essence prunes. (If you can’t find these, regular prunes will suffice, but the orange-essence prunes really make these bars stand out)
- 1 cup unbleached all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chopped, unpeeled apple (1 small apple, or less)
Ginger Chicken

- 1 lb boneless, skinless chicken breasts, cut into small cubes
- 2 tsp honey
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp cornstarch
- 1 tbsp oil
- 2 cloves garlic, finely minced
- 1 1/2 inch ginger, finely minced or 1/2 tsp finely ground ginger
- 1/3 cup water
- 2 tbsp fish sauce
- 1/2 small onion, chopped
- 3 scallions, chopped
- Freshly ground black pepper

- 1 lb ground pork or beef
- 1 small onion, finely chopped
- 2 scallions, finely sliced
- 1 tbsp oyster, plum, or hoisin sauce
- 2 tbsp flour
- 1 tsp sugar or Splenda
- 1 tsp salt
- 1/4 tsp ground red pepper
- 1 tsp oil
Pan-Seared Tomatoes Stuffed With Pork

Vietnam was a French colony for about 100 years
- 1 slice white bread
- 4 slightly underripe tomatoes, each about 3 inches in diameter
- 1 lb ground pork
- 1/2 small yellow onion, minced
- 1 clove garlic, minced
- 2 tsp fish sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp canola or other neutral oil
- (Alternatively, you can also use the uncooked meat mixture from the Vietnamese Meatballs recipe.)
Pork and Eggs Simmered in Coconut Juice and Caramel Sauce

Vietnamese comfort food. One of my favorites
- Caramel Sauce:
- 1 1/2 lbs boneless Pork chops
- 1/2 cup Caramel Sauce (ingredients below)
- 3 tbsp fish sauce
- 1 tbsp sugar or Splenda
- 6 large eggs, hard boiled and peeled
- 1 1/2 cups canned coconut juice, strained of bits of coconut meat
- 3/4 cup water
- 1 cup sugar, NO substitutions
Baguette Sandwich

Think of this as a Vietnamese hoagie
- 1 hoagie roll
- Mayonnaise
- Light soy sauce or Maggi Seasoning sauce
- 1/4 of one of the following: liver pate, or Vietnamese steamed pork sausage (gio lua), sliced and at room temperature, or savory Chinese sausage, cooked and sliced on the diagonal
- 1 small cucumber, sliced lengthwise, with seeds removed
- 2 or 3 sprigs cilantro, coarsely chopped
