Cream of Celery Soup

A quick, easy soup made even easier by using pre-cut celery and packaged, julienned carrot strips
- 3 cups chicken broth, fat-free, reduced sodium
- 3/4 lb celery, coarsely chopped. (About 2-3 stalks)
- 1/4 cup carrots, julienned (you can also use frozen sliced carrots)
- 1/4 cup onions, chopped (you can use frozen diced onions)
- 1/4 cup all purpose flour
- 3/4 tsp salt
- 1/4 tsp ground black or white pepper
- 3 cups hot (skim) milk
- 1/4 cup unsalted butter or margarine
German Potato Salad

A vinaigrette dressing makes this salad unique
- 4 potatoes
- 4 slices turkey bacon
- 3 teaspoons all-purpose flour
- 2 tablespoon white sugar
- 1/3 cup water
- 4 tablespoons white wine vinegar
- 1/2 cup chopped green onions
- salt and pepper to taste
Honey-Mustard Grilled Chicken

- 1/3 cup Dijon mustard
- 4 1/2 tablespoons honey
- 2 tablespoon mayonnaise
- 1 teaspoon steak sauce
- 4 skinless, boneless chicken breast halves
Pasta Pomodoro

- 1/2 16 oz package of spaghetti
- 4 tablespoons olive oil
- 1/2 onion, chopped
- 4 cloves garlic, minced
- 2 cups roma (plum) tomatoes, diced
- 2 tsp balsamic vinegar
- 1 (10.75 ounce) can low-sodium chicken broth
- crushed red pepper to taste
- freshly ground black pepper to taste
- 2 tablespoons chopped fresh basil or 1 tbsp dried basil
- 4 tablespoons grated Parmesan cheese
Tilapia Pitas

- 1/2 cup mayonnaise
- 4 tablespoons Italian salad dressing
- 1/2 cup crumbled feta cheese
- 2 anchovy fillets, drained
- pinch cayenne pepper, or to taste
- 1/4 teaspoon ground black pepper, or to taste
- pinch salt
- 3 tbsp olive oil
- 1 pound tilapia fillets
- 1/4 teaspoon lemon pepper
- salt and cayenne pepper to taste
- 4 cups iceberg lettuce, torn into bite-sized pieces
- 1 small red onion, chopped
- 6 pita breads, cut in half OR Use tortilla rounds
Vegan Bean Taco Filling

A great vegan dish that serves a crowd
- 3 teaspoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 (14.5 ounce) cans black beans, rinsed and drained.
- 2 tablespoons yellow cornmeal
- 1 1/2 teaspoons cumin
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon chili powder
- 1 cup salsa
Spicy Beans and Rice

Another good vegetarian dish
- 1 1/2 cups water
- 1/2 cup uncooked white rice
- 1 (15 ounce) can black beans, drained and rinsed.
- 1/4 cup water
- 1 or 2 fresh jalapeno peppers, seeded and chopped, optional
- 1 teaspoon ground cumin, or to taste
- 3 teaspoons chili powder, or to taste
- black pepper to taste
- 1/2 cup shredded sharp Cheddar cheese
- 2 fresh green onions, chopped
- 1/2 (2 oz) can sliced black olives, drained, optional
Lemon Chicken (Ga Nuong Chanh)

This is a classic sweet-savory combination of Vietnamese flavors
- Optional:
- 1 lb boneless chicken breasts, cut in to large cubes
- 2 tsp honey
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp sugar, or Splenda
- 2 cloves garlic, finely minced
- 1 tsp oil
- 2 scallions, finely sliced
- 3 tbsp lemon or lime juice
- 1 tbsp and 2 tsp fish sauce
- 1 tbsp oyster sauce
- 2 tbsp lemon or lime zest, grated
- Additional salt and pepper to taste
- 12 bambook skewers, soaked in water for at least 10 minutes
- Sweet and Sour Fish sauce
- Garnish:
- Bean sprouts, basil sprigs, mint sprigs

- 1 lb spicy Italian turkey sausage
- 1 1/2 tsp olive oil
- 1 clove garlic, sliced
- 1/2 (14.5 oz) can crushed tomatoes
- 1/4 cup red wine
- 1 tbsp chopped fresh basil or 1/2 tbsp dried basil
- 1/2 tsp dried rosemary
- Salt and pepper to taste
