Crunchy Pickled Bean Sprout Salad

A crunchy, tart-sweet salad, great for sandwiches in place of lettuce, also good as a side salad
- 2/3 cups sugar or Splenda
- 1 1/2 tsp salt
- 1 cup distilled white vinegar
- 1 cup water
- 1 lb bean sprouts
- 1 carrot, peeled and cut into matchsticks or pre-packaged julienned carrots (use about 1/2 cup)
- 5 small or 4 medium scallions, white parts only, cut into 1 1/2-inch lengths
Vietnamese Egg Loaf aka Pork-Mushroom Omelet

This is an excellent dinner dish
- 1/4 cup roughly diced shiitake mushrooms
- 1/4 cup roughly diced button mushrooms or portabella mushroom caps
- 1/2 lb ground pork, chicken, or turkey
- 5 eggs, lightly beaten
- 1/4 cup diced onion (you can use frozen diced onions)
- 1/2 tsp salt
- 1 tsp fish sauce
- 1 cup shredded cabbage (use a pre-packaged cole-slaw mix) or 1 cup bean sprouts
- 1/2 cup cooked vermicelli rice noodles, roughly cut into 1”-2” pieces. (Dried vermicelli rice noodles can be found in the asian section of the grocery store.)
- Pepper to taste

- 1 onion, chopped
- 2 cans black beans, drained and rinsed
- 1 cup salsa
- 1 can corn, drained and rinsed
- 1 cup mild, low-fat cheddar cheese

- 2 medium zucchini (about 1 lbs total)
- 1/2 bunch broccoli (about 2 c)
- 2 c firmly packed fresh spinach leaves
- Half stick butter or margarine
- 1/2 tsp dried oregano
- Salt
- 1 16oz ricotta (15oz ok)
- 2 eggs
- 2/3 pkg lasagna noodles (about 12 noodles) cooked
- 3 Tbsp butter
- 1/4 c flour
- 2 1/2 c milk
- 1/4 c grated parmesean cheese
- 8 oz mozzarella cheese
Cream of Celery Soup

A quick, easy soup made even easier by using pre-cut celery and packaged, julienned carrot strips
- 3 cups chicken broth, fat-free, reduced sodium
- 3/4 lb celery, coarsely chopped. (About 2-3 stalks)
- 1/4 cup carrots, julienned (you can also use frozen sliced carrots)
- 1/4 cup onions, chopped (you can use frozen diced onions)
- 1/4 cup all purpose flour
- 3/4 tsp salt
- 1/4 tsp ground black or white pepper
- 3 cups hot, skim milk
- 1/4 cup unsalted butter or margarine
Quick and Easy Vegetable Soup

- 1 (14 ounce) can low sodium, low fat chicken broth
- 1 (11.5 ounce) can tomato-vegetable juice cocktail
- 1 cup water
- 1 large potato, diced (or use frozen hash brown potatoes, about 1 cup)
- 2 carrots, sliced (or use about 3/4 cup of frozen, sliced carrots)
- 2 stalks celery, diced
- 1 (14.5 ounce) can diced tomatoes
- 1 cup peas
- 1 cup fresh or frozen corn kernels
- salt and pepper to taste
- Creole seasoning to taste
