Zucchini with quinoa stuffing

- 1/2 cup quinoa rinsed
- 4 medium zucchini
- 1 15 ounce can cannellini beans, rinsed
- 1 cup grape or cherry tomatoes, quartered
- 1/2 cup almonds, chopped (2 ounces)
- 2 cloves garlic, chopped
- 3/4 cup grated parmesan (3 ounces)
- 4 tablespoons olive oil
Maple-Apple Sweet Potatoes

- 3 pounds sweet potatoes, peeled and cut into 1 inch chunks

- 1/2 teaspoon vanilla
- 2 cups sour cream
