1. Preheat a grill or grill pan to medium-high heat
- 1 1 1 cup pineapple juice
- 1/4 1/4 1/4 cup sherry vinegar
- 1/4 1/4 1/4 cup packed light brown sugar
- 1/2 1/2 1/2 jalapeno pepper (split lengthwise)
- 1 1 1 garlic clove, smashed
- 1 1 1 tbsp. grated peeled fresh ginger
- 1 1 1 tsp. coriander seeds, toasted and ground
- 1 1 1 tsp. cumin seeds, toasted and ground
- 24 24 1 medium shrimp (about 1 pound) shelled and deveined
- Kosher salt and freshly ground pepper
- 1/4 1/4 1/4 cup olive oil
Lemon-Orange Cheesecake with Citrus Sauce

1. Heat oven to 325 degrees F
- Crust:
- 2 cups graham cracker crumbs
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, melted
- Filling:
- 2 (8-oz.) packages cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tablespoon orange-flavored liquer or orange juice
- 2 teaspoons grated lemon peel
- 2 teaspoons grated orange peel
- 1 teaspoon vanilla extract
- 8 oz. sour cream
- Sauce:
- 3/4 cup sugar
- 1 small orange, peeled, chopped
- 1 lemon, peeled, chopped
- 1-1/2 cups crushed pineapple in juice
- 1/2 cup ruby red grapefruit juice
- 3 tablespoons lemon juice
- 1 tablespoon orange liquer or orange juice
- 1 teaspoon vanilla extract
- 1 teaspoon cornstarch
- 1-1/2 teaspoons grated lemon peel
- 1-1/2 teaspoons grated orange peel

1. Place all ingredients in a blender and puree until smooth
- 1 cup plain nonfat yogurt
- 6 medium strawberries
- 1 cup pineapple, crushed, canned in juice
- 1 medium banana
- 1 teaspoon vanilla extract
- 4 ice cubes
Cranberry Pound Cake

1. Preheat oven to 350 degrees
- 2 cups granulated sugar
- 1/2 cup light butter
- 8 oz. light cream cheese
- 3 large eggs (or 6 egg whites or 3/4 cup egg substitute)
- 1 large egg white
- 3 cups all-purpose flour, sifted
- 2 cups fresh or frozen cranberries
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 (8-oz.) carton orange low-fat yogurt (or lemon)
- 2 tsp. vanilla extract

- 1/2 cup powdered sugar
- 4 tsp. orange juice

- 1 small jar of cherries

- 12 thin slices provolone cheese (6-7 ounces)
