Honey Bun Cake

Preheat oven to 325 degrees
- Frosting:
- 1 box yellow cake mix
- 4 eggs
- 1 c. sour cream
- 3/4 c. vegetable oil
- 1 c. brown sugar
- 2 tsp. cinnamon
- 2 c. powdered sugar
- 6 Tbsp. milk
- 1 tsp. vanilla
Basque Soup

Directions: Saute your onion, garlic, carrots, celery, and then add your chopped cabbage
- Ingredients:
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 3 carrots, chopped
- 3 celery stalks, chopped
- 1 small head of green cabbage, chopped
- 1 potato, chopped
- 8 cups broth, veggie, chicken or beef or a combination of any
- 1 16 oz tomato sauce
- 1 TBSP fresh Parsley, chopped
- 1 tsp Thyme
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cans pinto beans, drained
- salsa, your favorite
- French Bread, optional but very traditional!
Buttermilk Cornbread

preheat oven to 375 degrees
- 5 tablespoons butter - divided
- 2 tablespoons canola oil -
- 1 cup all purpose flour -
- 1 and 1/2 cup cornmeal -
- 1 teaspoon salt -
- 2 teaspoons baking powder -
- 1/4 cup sugar -
- 1 and 1/2 cups buttermilk -
- 1 egg - lightly beaten
White Chicken Enchiladas

1. Preheat oven to 350 degrees
- 10 soft taco shells
- 2 cups cooked, shredded chicken
- 2 cups shredded Monterey Jack cheese ( I like the Kraft Tex Mex)
- 3 Tbsp. butter
- 3 Tbsp. flour
- 2 cups chicken broth
- 1 cup sour cream ( I use Greek yogurt)

- 3 cups all-purpose flour
- 1 1/4 cups (2 1/2 sticks) unsalted butter, cold
- 3/4 cup powdered sugar
- 1/4 cup ice water
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon lemon zest
- Pastry Cream:
- 4 cups whole milk
- 8 egg yolks
- 1 cup sugar
- 2/3-3/4 cup flour
- 1/2 vanilla bean, seeds scraped
- Fruit Topping:
- 1 cup blueberries

- 1 cup blackberries

Sesame Noodles

Bring a large pot of water to a boil
- 1 pound Chinese egg noodles (1/8-inch-thick), frozen or (preferably) fresh, available in Asian markets
- 2 tablespoons sesame oil, plus a splash
- 3 1/2 tablespoons soy sauce
- 2 tablespoons Chinese rice vinegar
- 2 tablespoons Chinese sesame paste
- 1 tablespoon smooth peanut butter
- 1 tablespoon sugar
- 1 tablespoon finely grated ginger
- 2 teaspoons minced garlic
- 2 teaspoons chili-garlic paste, or to taste
- Half a cucumber, peeled, seeded, and cut into 1/8-inch by 1/8-inch by 2-inch sticks
- 1/4 cup chopped roasted peanuts

- Filling:

- 4 egg yolks
- 2 cup sugar
- 2 cups flour
- 1 cup buttermilk, room temperature

- 16 ounces (about 1 & 1/2 cups) creamy peanut butter
- 1/2 cup unsalted butter
- 1/3 cup buttermilk
- 1/4 cup unsweetened cocoa powder
- 16 ounces confectioners’ sugar, sifted
- 1 teaspoon vanilla extract
Cabbage Roll Soup

-Add onion, garlic, Worcestershire sauce, paprika, ground beef and salt to a skillet on medium heat
- 4 cups cabbage, roughly chopped
- 1 lb. ground beef
- 1 tsp Worcestershire sauce
- 1 tsp salt
- 1 tsp paprika
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 cup water
- 1 tsp oregano
- 1/2 tsp basil
- 680 mL can tomato sauce (or about 3 cups)
- 796 mL can diced tomatoes (or about 4 cups)
- 1 cup rice, uncooked
Cheesy Garlic S Squash

Pre-heat oven to 400 degrees F
- Instructions:
- 1 medium spaghetti squash
- 2.5 TBSP minced garlic
- 1 tsp olive or avocado oil
- 5 oz fresh spinach, chopped
- 1/2 cup cream
- 1 TBSP cream cheese (optional but deeeelish!)
- 1/2 cup freshly grated parmesan cheese, extra for topping
- salt and pepper to taste
- grated or sliced mozzarella for topping, to taste
